The first thing I do when I head to Applebee’s is peruse the dessert menu. One look at the Triple Chocolate Meltdown is enough to make me drool. Who can resist three kinds of chocolate oozing slowly from inside and outside of the cake? Naturally, I had to attempt to recreate this recipe at home. I found copycat recipes that, while I am sure would have been amazing, were complicated and took longer than I wanted to spend in the kitchen. After all, I wanted to spend time eating the cake, not all day preparing it! This recipe uses packaged ingredients, making it a snap to bring together and fancy enough to serve to your family and friends who will think you fussed. I suggest smudging some flour on your face and looking exhausted in hopes the rest of the family will feel sorry for you and make the rest of dinner. It probably won’t work, but it is worth a try.
I recommend keeping the cakes in the fridge until ready to eat, then microwaving them for ten seconds to heat the chocolate on the inside. Either way, if you have any chocolate lovers in your family, they will ask you to make this recipe often.
- 1 package (18.3 ounces) fudge brownie mix
- 2 eggs
- 1/4 cup water
- 2/3 cup vegetable oil
- 1 1/2 cups (12 ounces) hot fudge sauce
- 1 cup (8 ounces) white chocolate chips
- 1 cup (8 ounces) semi sweet chocolate chips
- 2 tablespoons shortening
- Vanilla Ice Cream
- Mix brownie mix as directed on package. Pour brownie mix into greased muffin tins, filling each about 2/3 full. Place in 350 degree oven and bake until done, about 20 to 25 minutes. Remove from oven and allow to cool completely. Cut a small hole in the bottom of each cupcake. Add 1 to 2 tablespoons of hot fudge sauce to each. Store in fridge until ready to serve. When ready to serve, melt white chocolate chips in microwave for 45 seconds or until melted. Add one tablespoon shortening. Stir. Do the same with the semi sweet chocolate chips. Place each cake in the microwave for 10 seconds. Remove from microwave and drizzle with vanilla and chocolate glaze. Serve immediately with a scoop of ice cream.
Be sure to hollow out a small amount of the bottom of the cupcake and insert the hot fudge sauce before microwaving. That helps make the cake warm and gooey. Are you ready to try the Applebee’s Triple Chocolate Meltdown recipe?
