“You know that cheesecake you made yesterday? Are you planning on making another one soon?” “Did someone eat all the cheesecake?” “Hey Mom, do we have anymore cheesecake left?” When I received these comments for my kids, my diabetic in-laws and my husband, I knew I had found a “keeper” in this recipe. What they didn’t have to know was that I had made the recipe using Splenda® No Calorie Sweetener Granulated, Splenda® Sugar Blend and several lower calorie ingredients. They were never missed! Adding to that was the gluten free crust everyone insisted tasted like cookies. I have a recipe I will be taking to gatherings with family and friends for years to come.
- Crust:
- 1 1/2 cups (12 ounces) almond meal
- 1/4 cup (2 ounces) butter, melted
- 2 tablespoons finely chopped walnuts
- 3 tablespoons Splenda No Calorie Sweetener, Granulated
- Filling:
- 3 packages (8 ounces each) fat free cream cheese
- 3/4 cup (6 ounces) Splenda Sugar Blend OR Splenda No Calorie Sweetener, Granulated
- 3 eggs
- 1 teaspoon vanilla
- Topping:
- 2 1/2 cups (20 ounces) chopped, peeled apples
- 1 tablespoon lemon juice
- 1/4 cup Splenda No Calorie Sweetener, granulated
- 1/2 teaspoon ground cinnamon
- 1/2 cup (4 ounces) dulce de leche OR 1/2 cup nonfat caramel ice cream topping
- 1/4 cup (2 ounces) chopped walnuts
- Sweetened whipped cream OR NonFat whipped topping
- For Crust:
- Mix together almond meal, butter, Splenda and nuts. Spread evenly across the bottom of a 9″ by 13″ casserole dish. Bake at 350 degrees for 10 minutes.
- For Filling:
- In a large bowl, add softened cream cheese, Splenda and vanilla. Mix until blended. Add eggs, mix until completely blended. Spread filling across the crust mixture.
- For topping:
- Mix diced apples with lemon juice until coated. Add sugar and cinnamon, stir well. Stir in caramel and nuts, Spread this mixture across the filling. Bake at 350 degrees for 50 minutes or until the center is almost set. Allow to cool. Top with whipped cream. Store cheesecake in the fridge.

Instead of snacking when hungry I’ve been aiming to instead drink a cup of tea (sometimes with a little Splenda) or sometimes with tiny sprinkle of sugar. That way later on I feel that I can relatively guilt-free eat something really delcious for dessert. 😛
I use Splenda all the time but have never tried baking with it. For that matter, I’ve never tried making Cheesecake. Nor have I ever HAD caramel apple cheesecake. Can you come to my house and make some? I’ll supply the ingredients! 🙂

I use to use Splenda for all of my cooking needs when a recipe called for sugar. That was when I had a diabetic husband. Now I only use it for my coffee, but if I know I am going to be baking for someone who is diabetic, I purchase Splenda for Baking. Too me though, it is actually sweeter than regular sugar and I end lowering the amount of it I use in a recipe.
I am making healthy low calorie choices whenever possible. This recipe looks so good and it really is so easy to swap out sugar. Kim

This is the second recipe I’ve seen this week that uses Splenda in something I would probably eat. I’ve always had issues cooking with Splenda, but maybe it was me. I’ll have to revisit this.
