Occasionally I am in a cupcake mood. The urge strikes to attempt a new variety of cupcake and I head to the kitchen to whip them up. This is either good for my family, if they like the new type, or bad, depending if they don’t like the taste and try to sneak away without eating them . With Spring here at last, I wanted something to celebrate the season. Pineapple reminded me of warm, tropical breezes and long days in the sun, plus I happened to have a can of crushed pineapple in the pantry. (Hint: Don’t use unsweetened in the recipe unless you want to add more sugar.) The cupcakes turned out to be a hit. Not only did Bryan ask to have some placed in his lunchbox for work, my father -in-law sent back the dish from the cupcakes I had given him and asked for a refill. He was very insistent too. “So, do you have any more of those cupcakes? This dish could use a refill.” What I didn’t tell them was I didn’t make these from scratch. I started with a boxed mix. It will be our secret.
- 1 box yellow or white cake mix
- 1 1/4 cup crushed pineapple
- 1 tablespoon vegetable oil
- 3 eggs
- 1 teaspoon vanilla
- Cream Cheese Frosting:
- 1/2 (4 ounces) cup of butter (1 stick), room temperature
- 1 cup (8 oz) of cream cheese (1 package), room temperature
- 2 cups(16 ounces) of powdered sugar
- 1 teaspoon of vanilla extract
- Mix cake mix, oil, vanilla and eggs together. Stir in pineapple. Mix until blended. Pour batter into muffin cups, making sure to fill each one half full. Bake at 350 degrees for 15 or 20 minutes or until a fork inserted in the middle of the cupcake comes out clear. Allow to cool before frosting.
- Frosting:
- In a large bowl cream together butter, cream cheese and vanilla extract until fluffy. Slowly add powdered sugar until completely blended. Spread on cooled cupcake.
These cupcakes look so pretty and taste so good. People will believe you spent hours making them. Next time I plan to craftily suggest I be taken out to eat after spending all this time in the kitchen. Or I could spend more time with our pet sheep. He loves to go for walks. I had to share a picture of him because he is too cute.

Sounds great! My kids love the easy stuff I made just as much as the stuff that takes me hours, so I’m much happier taking the easy route.
