Southern Mashed Potato Casserole Recipe

Holiday traditions are important in our family. Every year my kids and the extended family expect us to have certain dishes for Thanksgiving and Christmas. This year I tried to take a different approach. “Why don’t we purchase most of our Thanksgiving dinner?” I was met with resistance as the kids said, “Wait! You’re not making your fattening potatoes?” I found this Southern Mashed Potato Casserole Recipe when I was first married and have been making it for Christmas and Thanksgiving every since. It’s so good, but was always a pain to make. This year, with help from my Bellini Kitchen Master, I whipped up our casserole in record time.

Southern Mashed Potato Casserole Recipe:

This casserole is best made with fresh mashed potatoes. I used about 3 pounds of washed russet potatoes (about 6-8 medium potatoes.) You can peel the potatoes before cooking or not. If you leave the peels on, it will change the color from white to light brown.

Ingredients:
This uses a lot of dairy products! You’ll need cream cheese, butter, milk, cheese, salt, pepper and sour cream, along with the potatoes. Tip: It’s important to use a stronger cheese to bring out the flavor. I usually use a four cheese shredded taco blend.

Directions:
Step 1: Chop potatoes into chunks. Add the potatoes to the Bellini and cook on 100° C for twenty five minutes on speed 3.
Step 2: Add salt and pepper to taste.
Step 3: Add 1/4 cup milk, 3/4 cup sour cream, 1/2 stick butter, 1 (8 ounce) package cream cheese, and 1 cup shredded cheese to the Bellini. Process on speed 3 for five minutes.
Step 4: Place mixture in casserole dish. Sprinkle with shredded cheese and bake at 350° for 25 minutes.
