“Will I ever get used to not eating bread?” my daughter asked when she was first diagnosed with celiac. It was a difficult adjustment period as I had to learn to read labels to see if products contained wheat. You’d be surprised at the number of things that do! I had to discover new ways of cooking and work up a new repertoire of recipes. Going out to eat was a challenge. We had to look up the restaurants to see if any gluten free items were on the menu. We finally discovered Gluten free products and began stocking up. Life as gotten easier the longer we have dealt with being gluten free, but it can still be a struggle. Have you ever tried to find a bakery to make a gluten free wedding cake? Not so easy!
