“I have been craving pizza, Mom,” my daughter informed me as she walked through the door of our house. Once upon a time this would have been no problem. I would have either whipped up a homemade pizza, placed a frozen pizza in the over or ordered takeout, depending on my mood and how much I had going on in my life. Now that my daughter has been diagnosed with Celiac, my options are limited. Most restaurants do not have gluten free pizzas and I can’t make a regular crust or purchase a mix. Thankfully, I discovered Wholly Wholesome products. They are made in a dedicated gluten free bakehouse so I don’t have to worry about cross contamination and, better yet, they make a frozen pizza crust. I’m back to making pizzas that save me time and money, a total win-win combination in my household.
I asked my family what sort of pizza they wanted for dinner and got responses like, “Whatever,” “I don’t care,” and “Surprise me.” This is not the thing to tell me because I take them up on their advice and make the sort of pizza I would like. I had been craving pesto, so the combo of tomato, pesto and mozzarella caught my eye. What’s not to love if for pesto fans? The recipe is simple, has only five ingredients and can be prepared and on the table in less than 30 minutes.
Here’s what you need to make the pizza:
1 cup (8 ounces) shredded mozzarella
3 plum tomatoes, thinly sliced
1 gluten free pizza crust
1 jar (4 ounces) prepared pesto
To make the pizza , without a soggy crust, follow these steps. Spread the dough evenly on a pizza sheet that has been sprayed with nonstick cooking spray or coated with olive oil. Allow the crust to bake for 10 minutes or until done. Drain the pesto sauce in a small strainer to remove most of the oil and spread over the crust.
Spread parmesan cheese evenly over the pesto, and top with mozzarella. Thinly slice the tomatoes and pat them dry with a paper towel to remove the moisture. (This tip will help keep the crust from becoming soggy.) Bake 5 to 10 minutes or until cheese is melted.

I am glad to know that you have the option of making a Gluten Free pizza. I would have never thought of combining pesto as the base for pizza. I will try this combination the next time I am making my own pizza.

This looks like a great recipe and the pizza looks delicious. We are not a gluten free family because we do not have an issue with gluten so I don’t really have a favorite gluten free food. I have been wanting to eat gluten free just to see if possibly we would feel better doing so…but it is a big change if you don’t really need to do so.

This looks so good. I have never had gluten free pizza but this looks really tasty. The only thing that I would have added would be some spinach because I love spinach just as much as I love pizza.

Oh, this looks good! I will keep an eye out for that dough, I haven’t used that one. Mine normally comes as a baking mix in a box or a bag, and I have to add ingredients to it.

We found some gluten-free cookies in the store the other day that were amazing. I wish I could remember the brand, but they were better than Chips-A-Hoy or any of those other pre-packaged cookies.
