I have a “secret” kitchen confession to make. I am a lazy cook. I can make complicated dishes and know all the technical cooking terms, but don’t want to spend hours in the kitchen. Before I had children I would prepare gourmet meals with fancy ingredients. Afterwards, my gourmet meals were not well received. Once, when I made a quiche, my young son looked at it and said, “I hope this tastes better than it looks!” This was quickly followed by, “Blech! It doesn’t!” The lesson I learned? Make simple meals. Sometimes, however, I need to make a dessert that looks impressive when attending a potluck or family meal. One of my favorites is Smores Pie. I created it by combining several recipes I liked to get an end result that elicits responses like, “Holy Moly! This is good!” I smile and accept compliments without letting them know it only takes 10 minutes prep time. My advice: let your family think it took you hours to prepare this pie. Perhaps they will offer to do housecleaning chores so you can make another. Did I mention it only takes five ingredients?
Here’s what you need to make one 9″ pie.
Ingredients:
1 (4.6 to 6 ounce) Milk Chocolate Bar
1 (8 ounce container) whipped topping
2 cups (about 6 ounces) mini marshmallows
1/2 cup chocolate coated peanuts, chopped
1 graham cracker pie crust (to make Gluten Free use the gluten free crust recipe outlined below)
Optional toppings: caramel, whipped cream, chopped chocolate coated peanuts
Begin by breaking a 4.6 ounce milk chocolate bar into cubes and placing in a microwave safe bowl. Microwave on high for 1 minute and then stir the chocolate until it is smooth.
Stir in a 12 ounce bowl of softened whipped topping. I used a handy dandy Smart Scoop Ice Cream Scoop from Good Cook, which works well with hard or soft topping and is nonstick. Mix the topping and chocolate until completely blended. Add 1 cup of chopped chocolate covered peanuts to the mixture and stir. (I placed the peanuts in the blender for 20 seconds.)
Next, add two cups of mini marshmallows and stir, stir, stir. Now scoop the mixture into a graham cracker pie crust and place it in the freezer for two hours or until firm. I used a regular graham cracker pie crust since I was in a hurry. This could easily be converted to a gluten free pie crust by mixing two cups gluten free graham crackers, 2 tablespoons sugar and 4 tablespoons butter together.
When the pie is frozen, drizzle with caramel and top with whipped cream and chopped chocolate covered peanuts, if desired. You don’t have too, because it tastes good either way, but it makes it look like you fussed. Because we want the free chores, remember?
