I am a huge fan on anything with Peanut Butter. When I discovered my Thanksgiving dinner guest count had almost doubled, going from eleven guests to twenty, I had to have some extra dishes in a hurry. I had the ingredients for this pie in the house and it came together in less than fifteen minutes, but I am not admitting that! Let them think I fussed! If you need a festive dessert in a hurry, try this pie. It’s sure to be a hit.
Ingredients (to make one pie):
3/4 cup peanut butter
3/4 cup powdered sugar
4 ounces cream cheese, softened
1/2 cup milk
8 ounces of frozen whipped topping, thawed
1 pie crust
Hot fudge Ice cream topping for drizzle, optional
Directions:
Combine peanut butter, cream cheese and milk. Mix until blended. Add powdered sugar and continue to mix. Fold in whipped topping. When filling is completely mixed, pour into a pie shell and refrigerate until serving. Drizzle heated hot fudge topping over slices of pie before serving, if you want to be fancy. Store leftovers in the fridge.
The beauty of this pie is crunchy or regular peanut butter can be used and ingredients can be substituted with reduced fat ingredients if desired. I was running low on ingredients and mixed crunchy and regular peanut butter and substituted half and half for the milk with delicious results. The pie can also be wrapped well and frozen for up to a month so you have a spare treat for those last minute parties and events.
