Gluten free cooking can be a challenge. As my son says, “Gluten free cooking is either really good or really nasty. There’s no in between.” I’ve had my share of flops. The most recent was a cupcake I was experimenting with. I asked my neighbor to test taste one for me. His face lit up when I gave it to him, since he normally enjoys my cooking, until he took the first bite. It was down hill from there as he tried to be polite. My son helped him out by saying, “They’re just not good, Mom.” To ring in the new year I’ve rounded up ten of our favorite gluten free main dishes, ones I would not be ashamed to serve my family and neighbor because they’re tasty. People won’t even realize they are gluten free. Even better, the recipes aren’t complicated. When I had to start preparing gluten free dishes I was amazed at the ingredients I did not have in my kitchen-some I had never even heard of-and the complicated steps. What can I say? I like easy. So, without further ado, let’s get cooking!
1. 3 ingredient Crock Pot Chili is a huge time saver. I can put in the crock pot on low in the mornings and have a steamy bowl waiting for us in the evening. If I forget to put it in the Crock Pot, I can make it start to finish on the stove is 20 minutes.
2. Chicken Capri has nine ingredients, two of which are salt and pepper, and is ready within 30 minutes. It’s low fat, but even the kids eat it without complaint. And, believe me, I enjoy chicken meals. They complain if they think we are eating chicken too often.
3. Gluten Free Pesto Pizza was developed on a day my daughter complained she couldn’t eat pizza with her friends anymore. I use homemade pesto sauce when basil is in season, but a jar from the store is a quick substitute.
It may not be time for outdoor grilling season yet, although I try to send my son out any time we have a warm streak, but these next three dishes are perfect for impressing guests.
4. Grilled Pepper, Steak and Potato Salad is a delicious twist on salad. Even my son, who is not a salad fan, told me, “You can make this again.”
5. Lemon Grilled Chicken with Pineapple Sauce and Rice is a great dish for spring and summer.
6. Greek Style Chicken with Tzatziki sauce is one of my favorites, mainly because I love Tzatziki sauce.
7. Grilled Salmon, Pear & Blue Cheese Salad is super fast and easy if you use packaged grilled salmon like I did. If you have some salmon on hand–I buy it and freeze it when I find it on sale–it’s perfectly fine to substitute.
8. Loaded Baked Potato Soup is perfect for cold winter nights. I like to serve it with some homemade gluten free cheddar biscuits.
9. Southwestern Meatloaf was developed as a twist on a classic meatloaf recipe. Bryan loves meatloaf. The rest of us? Not so much. This was our compromise.
10. Lemon Herb Chicken – easy and tasty. What’s not to love?

These all look great,We do not have any problems with gluten but I do like to try gluten free food sometimes.I think first on my list has to be the Lemon Herb Chicken.
It’s great to see there are so many delicious dishes that are gluten free. Folks think when you have to cut something out it food options will be gross.
Many people don’t realize that a lot of the food they naturally eat are already gluten free. When we first found out that my son was autistic, we all went gluten free for 6 months. We were the most miserable people ever. If you don’t need to eat gluten free, it’s actually not that good for you.
