As the temperatures dip down in our area to the singles digits, I have a secret to confess. I don’t want to go out for Valentine’s Day. I have no desire to get all dressed up and freeze to death before arriving at an overcrowded restaurant or a packed movie theater. While I am completely down with takeout food, I prefer to stay home, snuggle up, watch a romantic comedy and sip a special beverage. This year I found a recipe for Kahlua Coffee Frappuccino recipe and realized how easy it would be to make them into mocktails. I changed it around a little and added mocha coffee to give it an added chocolate boost. Not only that, this recipe didn’t have any complicated ingredients I’d need to run to the store to purchase. Everything is available in my cabinet.
As usual, this recipe is easy to make, taking ten to fifteen minutes to throw together. Because who wants to spend Valentine’s Day evening working in the kitchen? If you prefer not to make this recipe as a mocktail, substitute 1/2 Kahlua for the almond extract.
Just mix the coffee and milk together in your blender, then add the extract (or Kahlua), sugar and ice. Blend on high for 30 to 45 seconds. Divide the mixture between four glasses. To make it fancy, you can add whipped cream and shaved chocolate. Maybe even add a ring of chocolate sugar around the rim. (To do this dip the rim of the glass quickly in corn syrup, then in the chocolate sugar.)
- 3/4 cup milk
- 3/4 cup prepared Mocha coffee mix
- 1/2 teaspoon almond extract
- 3 cups ice
- 4 teaspoons sugar
- Chocolate shavings and whipped cream for garnish
- (If you are preparing this as a cocktail, use 1/2 cup Kahlua.
- Mix together milk and coffee. Add mixture to a blender, along with the extract, ice and sugar. Mix 30 to 45 seconds. Pour into four glasses. Garnish with whipped cream and chocolate shavings.
