Gluten Free Peanut Butter Chocolate Cookies Recipe

August has been my favorite month this year. I’ve spent a week traveling with my daughter through small towns in Kentucky, tubed down the Chattahoochee river with my family and visited several other states. Since I love to travel, I’ve had a great time.  The one downside of traveling with my daughter is finding food and snacks she can eat.  Having Celiac means we can’t stop at most fast food restaurants and we have to carefully check the menu where ever we go. Because of that, I keep snacks we can all enjoy in the car, like Smuckers Peanut Butter and apples to use as dippers. I also have a super duper delicious gluten free peanut butter chocolate cookie recipe that only has five ingredients. Yes, that’s right, five! These cookies take minutes to whip up and prepare, freeze well and can be shipped off to hungry college students too.  You can change the ingredients around to suit your taste, but this is our favorite version.
Peanut Butter Chocolate Cookies

It’s easy to pick up supplies for apple dippers (apple slices paired with Smucker’s Peanut Butter) at Walmart while we are on the road and just as easy to prepare a batch of cookies to take along. Want to see some of the places we have been enjoying our snacks? Hmmm. Maybe it is like a snackation? Here’s the world’s tallest Superman Statue located in Metropolis, Illinois. I wonder if Superman likes cookies? We would share!

After a 3 1/2 mile hike around this tranquil lake in Lebanon, Kentucky, there’s nothing like the apple dippers to give us a quick burst of energy.

We’ve been enjoying the local scenery too.  Having a young child means no one will give you strange looks if you decide to play in the fountain at Coolidge Park, Chattanooga.  Or maybe they will, but having the child makes them easier to ignore.

Gluten Free Kitchen Sink Peanut Butter Cookies Recipe
Ingredients
  • 1 cup peanut butter
  • 1 cup brown sugar
  • 1 egg
  • (1/2 teaspoon vanilla, optional)
  • 1/2 cup EACH pecans & chocolate chips)
Instructions
  1. Mix peanut butter, brown sugar, egg and vanilla (if using) until blended. Stir in pecans and chocolate chips. Roll into balls and place on baking sheet. Make a criss cross pattern with a fork. Bake for ten minutes at 350.
