You know the old saying, “You can’t have your cake and your coffee too?” No? Ok, I just made it up. But as a huge fan of mocha flavored desserts, I’ve discovered you can have both with this semi-homemade Chocolate Mocha Mousse cake recipe. This recipe is so easy because I’ve used a “secret” ingredient, International Delight Mocha Iced Coffee. It’s also easy to make the recipe gluten free simply by swapping the cake mix used in the recipe to a gluten free version. I love these simple, versatile recipes! The process is a little time consuming, but only because of the freezing time.
Chocolate Mocha Mousse Cake Recipe:
Prepare a box of chocolate cake mix as directed on the package. Now add the “secret: ingredients to make it moist and full of mocha flavor; International Delights Mocha iced coffee and whipping cream. Bake, in layer pans, as directed on package. You’ll only need one layer of the cake so freeze the other for another use (or make two Chocolate Mocha Mousse cakes. You know you want them.)
The cake has to cool completely before the mousse filling can be added. While the cake is cooling, stir together the mocha mousse filling. You’ll need heavy cream, chocolate chips and International Delight Iced Coffee. Melt the chips, cream and coffee together. Allow to cool, then whip the filling, using a mixer, until mousse consistency. Store in the fridge until needed. Once the cake is cooled, top with the mousse mixture and place in the freezer until firm. This should take around 45 minutes.
Once the topping is added, prepare mocha whipped cream. You’ll need heavy whipping cream. Using a mixer, beat the mixture until stiff peaks form. Add a few teaspoons of International Delight Mocha iced coffee and you’ve got recipe mocha cream! Top the mousse layer of the cake with the whipped cream. Freeze until firm. (Approximately 45 minutes.) Drizzle the hot fudge topping on the cake.
Store the cake in the freezer until ready to serve. You’ll also want to store the leftovers (if you have any) in the fridge or freezer.

And, for those of us who love iced coffee drinks, International Delight ready to drink iced coffee is perfect to keep in the fridge for when the craving hits. No need to have to get ready and drive to the coffeehouse when you can pick up a carton of International Delight in the refrigerated tea and juice section at Walmart while you’re shopping. More economical and more convenient? Yes! Definite pluses for me.

This dessert sounds & looks amazing, but I am a little confused. Did you use a single layer cake mix or a regular box of cake mix since it looks like there’s only one layer in the picture?
I used a regular box of cake mix, but at the last moment decided to just use one layer on the cake. I saved the second layer for another use.
Chocolate mousse is one of my favorite things EVER! I need to try this recipe for my next party! I bet it’s such a huge hit! Yum!
