No Bake Rocky Road Toffee Fudge Recipe

Christmas is my favorite holiday because there’s plenty of excuses to bake. I can bake treats I can’t make any other time of year to take to parties, to church, and to the relatives. No one says, “Don’t we have enough sweets?” Because can you ever have too many during the holidays?  Instead, they ask, “Hey, did you make your special recipe for {insert favorite dessert?} It’s also my favorite time of year to experiment with new recipes and adapt old ones. I had a recipe for Rocky Road Fudge in one of my holiday cookbooks but decided it needed Toffee to make it better. This is so easy to make. It can be whipped up in around ten minutes and only requires chilling time. Because it is naturally gluten free the entire family can enjoy it. And no bake with only five ingredients? Even better.

How to Make Rocky Road Toffee Fudge

This fudge can be made with your favorite type of chocolate; milk, semi-sweet, or white chocolate. If you are feeling adventurous, you can use a blend of all three! The original recipe called for a can of sweetened condensed milk. I tried this first and it does not work! The mixture doesn’t set and it is very sticky, although it did taste good. I decided to substitute a small amount of evaporated milk and it worked perfectly. If you prefer the fudge to be thinner, just change the amount of evaporated milk from 1/4 cup to 1/3 cup.  I also drastically reduced the number of marshmallows in the recipe. If you want mostly marshmallows, add another cup to the recipe.

No Bake Rocky Road Toffee Fudge Recipe
Ingredients
  • 1/4 cup (2 ounces) evaporated milk
  • 1 (12 ounces) package semi-sweet OR milk chocolate OR white chocolate chips
  • 1 1/2 cups (12 ounces) roasted, salted peanuts
  • 2 cups mini marshmallows (about 4-5 ounces marshmallows)
  • 1 cup (8 ounces) toffee pieces (you can find these in the baking section)
Instructions
  1. Place chocolate chips and evaporated milk in a microwave-safe bowl. Heat for approximately 1 1/2 minutes or until the chips are melted. Stirring after 30 seconds and one minute. Remove the chips mixture from the microwave and stir until the mixture is smooth. Mix in toffee chips and peanuts. Mix until blended. Add marshmallows and stir until the mixture is combined. Spread the mixture into a 9″ by 9″ pan lined with waxed paper. Place in the fridge and chill until firm. (Around an hour) Take the mixture out of the fridge and cut into bars.

Not only is this fudge a hit with the entire family, who kept taking pieces out of the bag in the fridge to sample when they thought I wasn’t looking, it was a hit with the neighbors too.
