Want to know my summertime weakness? It’s pie. Specifically, ice cream pie. You’re combining the goodness of ice cream with the smooth creaminess of pie. What could be better? I had a craving for ice cream pie and began digging through my old recipes. I found a recipe for an old treat, Seaweed Pie. I read through the ingredients and discovered some hiccups. I couldn’t use a chocolate crust since my husband is allergic, and no one in the family, except me, likes pistachio pudding. No problem! I changed all the ingredients but two and came up with this smooth, creamy Butterscotch Ice Cream Pie recipe. It’s sure to be the hit at your next cookout or potluck dinner.
As much as I enjoy eating pie, I don’t enjoy some of the side effects I experience after eating, like heartburn. There have been times in the past I couldn’t eat for days thanks to heartburn symptoms. And who wants to miss out on pie? Thankfully, I’ve found relief by picking up a package of Kroger (link http://bit.ly/2JE6Niv) Omeprazole Orally Disintegrating Tablet (also referred to as ODT) while I’m shopping for groceries. By taking one pill every 24 hours for 14 days, it treats the same heartburn symptoms as Prilosec OTC ® and works as well as the national brands. In one to four days, I’ve felt the full effect and am ready to enjoy my pie again!
Even better, it’s available in a pleasant strawberry-flavored dissolving tablet that melts on the tongue, making it easy to take for anyone who has difficulty swallowing pills or for times when I’m traveling and can’t get a glass of water immediately. Butterscotch Ice Cream Pie recipe
- 1 (9 inches) graham cracker crust (or Gluten-free graham cracker crust)
- 1 (3.4 ounces) package instant butterscotch pudding mix ®
- 1 (12 ounces) package frozen whipped topping, thawed in the refrigerator
- 3 cups vanilla ice cream
- 1 (2.1 ounces) Butterfinger Bar or Toffee Bar, crumbled
- Optional Ingredients:
- Chocolate Syrup, Canned Whipped Topping, Maraschino Cherries
- In a blender, mix the butterscotch pudding mix and whipped topping until combined.
- Add the ice cream to the butterscotch mixture and pulse until combined, approximately 8 to 10 seconds.
- Spread the butterscotch/ice cream mixture evenly into the prepared graham cracker crust.
- Cover the pie tightly with aluminum foil and freeze for four to six hours.
- Remove from freezer ten to fifteen minutes before serving.
- If desired, top each slice with whipped topping and a cherry. Drizzle with chocolate syrup.
- Store leftovers in the freezer.
This pie is so easy to make and only has a 10-minute prep time. It does need to chill for four hours before serving, but it can be made a day or two in advance and stored in the freezer until needed. If you need a gluten-free version, simply substitute a gluten-free graham cracker pie crust.

I let it soften for about 10 minutes before I blend it.
