Chocolate Caramel Nut Wafers Recipe
These treats use ingredients you can find at any grocery or big box store. For the caramels, use the wrapped baking caramels. I like either Kraft or Werther’s brands. If you prefer, you can substitute half-and-half for the heavy cream.
What You Need To Make The Wafers
- vanilla sugar wafers
- white or milk chocolate candy melts
- chopped pecans
- baking caramels, like Kraft brand baking caramels
- heavy cream
Fun Variations
There are so many ways to make these treats. Here are a few of our favorites:
- substitute chocolate sugar wafers for the vanilla sugar wafers and dip in white chocolate, caramel, and nuts
- substitute crushed peppermint candy for the caramel and nuts. Dip either vanilla or chocolate wafers in white or milk chocolate melts and then top with peppermint candy.
- Substitute toffee chips for the nuts and/or the caramel. Dip white or chocolate wafers into chocolate melts. Top with toffee chips or spread the caramel over the wafers and then dip in toffee chips.
- Substitute your favorite chopped candy for the caramel and nuts. Good choices include finely chopped peanut butter cups, finely chopped Heath bars, or mini M&Ms.
- substitute mini chocolate chips for the caramel and nuts.
- Make a fruit version by substituting strawberry sugar wafers, dipping in white chocolate, and then in chopped, dried strawberries. A banana version can be made the same way using banana wafers dipped in white chocolate and then coated with chopped, dried bananas.
How to Melt Caramels In the Microwave
Unwrap the caramels and place them in a microwave-safe bowl. Add 1 to 2 tablespoons of cream. Heat, on high, for 1 minute. Stir. Continue to heat on high in 1-minute intervals, stirring after each, until caramels are melted. The entire process should take around three minutes.
Preparation Tips
- Chocolate melts can be melted in minutes in the microwave. Place the melts into a microwave-safe bowl. Heat, on high, for 45 seconds. Stir. If the ingredients aren’t completely melted and smooth, return to the microwave for another 45 seconds.
- Cookies need to be dipped quickly as the chocolate melts will begin to harden. If this happens, return the bowl to the microwave for 15 to 20 seconds. Stir until the mixture is smooth again.
- The candies can be stored for up to 3 or 4 weeks in an airtight container.

Directions
- Spray a piece of waxed paper with non-stick cooking spray. Place on a baking sheet.
- Place the melts into a microwave-safe bowl. Heat, on high, for 45 seconds. Stir. If the ingredients aren’t completely melted and smooth, return to the microwave for another 45 seconds.
- Dip the wafers into the chocolate melts. Place the dipped wafers on the waxed paper. Place baking sheet in the refrigerator for 10-15 minutes or until candy melts are hardened.
- Unwrap the caramels and place them in a microwave-safe bowl. Add 1 to 2 tablespoons of cream. Heat, on high, for 1 minute. Stir. Continue to heat on high in 1-minute intervals, stirring after each, until caramels are melted. The entire process should take around three minutes.
- Spoon caramel over the chocolate. Immediately sprinkle with nuts. Return the wafers to the refrigerator to harden, around 30 minutes.
