I spend a lot of my time thinking, “What am I going to cook tonight? What to make? What to make?” I am a fan of easy meals, especially when I am running short on time, but my family is adventurous and doesn’t like having the same old, same old every night. That makes creating family meals challenging. On nights when I know I will be running short on time, I pull a meal kit out of the pantry and give it my own touches to “jazz it up.” I had found boxes of Kraft Recipe Makers Sweet and Sour Chicken meal starter on the pasta aisle while I was browsing and told my son, “This is what we are having for dinner tonight.” There was some general fussing as he told me he didn’t really want any more chicken, but I told him I planned to use shrimp instead. When he found out we were having shrimp, he got on board quickly and started helping plan.
We had a few snafus during meal prep because the sauce didn’t turn out as thick as I wanted so I adapted the recipe slightly and made additions of my own. I started by adding one pound of shrimp, 1 cup of chopped mixed red and green bell peppers, one cup chopped onion and a teaspoon of garlic to a wok. I added the sauce packet from the Kraft Recipe Makers and let this simmer until the veggies were tender. This took about five minutes. Green pepper could be used instead, but I wanted more color and the red and yellow peppers gave it some “pop.”
Next I added one half cup of crushed pineapple, the finishing sauce packet and eight ounces of cream cheese. I stirred everything together until the cream cheese was melted and then let it simmer five minutes for the sauce to reduce. I had originally planned to serve these in tortilla shells, but since my sauce was runny I added them to stand alone taco shells. Can you say delicious? This was one of the best quick meals I had made in a while. The kids gave it a thumbs up and Bryan told me, “This is really good!” Whenever I can please the entire family and start with a ready-made meal, I consider it a win.
My family has asked me to add this to the menu plan again soon, which is no problem because it only takes minutes to prepare and can be made in one pot, saving me clean up time too. As a person who is not always thrilled (okay, never) to have kitchen cleanup duty, I didn’t mind being out of the kitchen in a hurry after the meal.

I agree…substitute with chicken {we aren’t big shrimp fans either}
Isn’t it awesome when you get the thumbs up from everyone you are cooking for? I love those nights!!
This looks wonderful, I love sweet and sour anything! When I’m in a hurry and don’t know what to cook, I’ll often make “Scramblers” – whatever I have on hand fried up with a few eggs added. This last week I’ve fried up leftover rice, veggies, and eggs with a dollop of bacon dip that I had leftover. It tasted way better than that sounds, LOL.
I LOVE the Recipe Makers! I haven’t been disappointed with one yet.

Some of the best and most delicious meals are the ones we end up with when the “real” meal ran into problems. I enjoy when those types of meals are discovered and created.
