Do you ever have nights when you want to try something different for meals because you feel like you family is stuck in a rut?  I feel like this sometimes and want to whip up some sort of tasty new recipe. Here’s the kicker: on busy weekday nights I don’t have a lot of time to cook and spend hours in the kitchen.  I bet you can relate.  After a busy day, who wants to spend hours prepping, cooking and cleaning? Because of this, I am always on the lookout for recipes I can adapt to make a quick dinner that will still appeal to my family and get me out of the kitchen.  Tacos are a mainstay in my house, as they allow me to put a 30 minute meal on the table, but the kids complain if we have them too often. When I was challenged by My Blog Spark and Old El Paso to “go beyond tacos,” I found a recipe for Mexican Casserole and adapted it slightly. It’s quick, easy and tasty.

A delicious Mexican casserole that is a slightly different take on traditional Mexican dishes.
Ingredients
  • 1 pound lean ground beef
  • 2 cups enchilada sauce
  • 1 package taco seasoning
  • 3 cups tortilla chips, crushed
  • 2 cups sour cream
  • 1 (2 ounce) can sliced black olives, drained
  • 1/2 cup chopped onion
  • 1/2 cup chopped fresh tomato
  • 2 cups shredded Cheddar cheese
Instructions
  1. In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in enchilada sauce and taco seasoning, reduce heat, and simmer 10 minutes.
  2. Spray a 9×13 baking dish with cooking spray. Spread crushed tortilla chips in dish, and then spoon beef mixture over chips. Spread sour cream over beef, and sprinkle olives, green onion, and tomato over the sour cream. Top with Cheddar cheese.
  3. Bake in preheated 350 degree oven for 30 minutes, or until hot and bubbly.

  10. When we go camping, me make fajita foil packets. My husband uses steak, I use Gardein “beef” tips. We add sliced bell pepper and onion, adobo, and chili powder and we cook them in the fire. We serve it with baked potatoes and tortillas, as well as salsa. When we are home we also add gucamole and my husband adds cheese and sour cream.

  29. I make a taco pie that is delicious. Pretty sure I invented it too! LOL Just layer tortillas, taco meat and cheese lasagna-style about 4 or 5 layers deep in a pie pan. Bake until cheese is melted and serve with lettuce, tomatoes, taco sauce and sour cream! Yum!

  44. I really like to make chili then top with sour cream and salsa and top that with cornbread, sounds a little strange but its delicious! My children like to add barbecue sauce to their tacos.

  45. I love Soft Tacos made with chicken or beef. I add black olives, diced tomatoes,shredded Mexican cheeses, shredded lettuce and sour cream along with some mild Taco sauce. Sometimes I layer that all over the top of rice instead of using Tacos.

  55. Chicken or Beef Enchiladas is my favorite Mexican dish, I order this whenever I go out to eat for Mexican food. I don’t eat Mexican food that much though, I wish I did…I love it!

  56. I like the Chicken Quesadillas. I do not usually like them too spicy but with a bit of kick.

  57. My favorite Mexican dish is chicken fajita nachos. I love to cook green and red peppers and onions in the skillet and cook up some spicy shredded chicken in the oven. I top oven baked tortillas with the veggies and chicken & then top it all with some authentic white Mexican cheese. I LOVE it!
