Cheese Crusted Basil Stuffed Chicken Gluten-free Recipes

What do you mean we have to be gluten-free?” That was my first reaction when my daughter was diagnosed with Celiac disease.  I imagined a boring future filled with bland recipes or meals that were, shall we say, less than flavorful.  I was not looking forward to gluten-free cooking and, as for gluten-free recipes, weren’t they filled with strange, hard to pronounce ingredients?  Once I began to take a serious  look at different gluten free products, an entirely new world opened up before my eyes. With only a few adaptions we could have many of the same dishes as before.   The problem? I didn’t have a lot of quick cooking, ready in minutes meals I could serve guests.  Because, really, who wants to spend all their time in the kitchen when they could be spending time with friends?  I needed a simple, easy solution.

Gluten-free chicken to speed up my meal prep? Yes, please.

 Help came in an unexpected way when I was shopping at Sam’s. I spied a demo, and upon closer inspection, discovered it was for Tyson fully cooked gluten free Grilled & Ready Chicken Breast Fillets.  Gluten-free chicken that is grilled, ready and waiting to be made into something delicious? Sign me up, please!  Naturally, I purchased a bag, brought it home and thought, “What sort of gluten-free chicken recipes can I come up with that won’t take a lot of time, but look liked I fussed? ”  After digging through our cabinets and finding a jar of pesto, I decided on cheese crusted basil stuffed chicken.  It’s sounds and tastes fancy, but only has five ingredients and takes less than 30 minutes to prepare.

Serves: 6
Ingredients
  • 6 Tyson Gluten Free Grilled & Ready Chicken Fillets
  • 6 Tablespoons prepared Pesto
  • 1/2 cup (4 ounces) Parmesan cheese
  • 1/2 cup (4 ounces) Rice Flour
  • 1 egg
Instructions
  1. Place the egg in a bowl and beat until fluffy. Mix the Rice Flour and Parmesan cheese together and place in a shallow bowl. Dip the chicken; first into the egg and then into the Parmesan cheese/rice flour mixture. Using a knife, slice a narrow slit down the side of each chicken breast. Place one tablespoon of pesto in each chicken breast. Arrange the chicken breasts side by side in am 8″ by 8″ casserole dish and bake at 350 degrees for 10 to 15 minutes or until heated through.

  4. Oh this sounds absolutely delicious! We don’t specifically look for gluten free; but we do enjoy a lot of gluten free recipes without even knowing they are gluten free until after the fact. This stuffed chicken would be a huge hit at our place.

  25. I can relate to having to modify the family’s diet. My son was diagnosed with a peanut allergy a few years ago and we’ve had to go nut free. It’s a big change and products like this are a huge help! my sister in law is gluten intolerant so I will have to let her know about this new gluten free chicken!
