One of my favorite things about the holidays is indulging in treats I don’t get to eat any other time during the year. Unfortunately, each January I pay the price for my indulges and have to return to my regular diet. This year I have resolved, with all the health problems plaguing our family, to cook good-for-us meals. The problem? My children have equated good for you meals with “boring and tasteless.” I am determined to prove them wrong and have planned a series of taste tempting recipes that will please the pickiest child. My favorite meat to cook with is boneless, skinless chicken breast. They are so versatile and can be prepared so many different ways, but my kids complained I always baked them. When I was challenged to create a creative recipe using NatureRaised Farms chicken breast available at Sam’s Club, I was all over it. Not only is this chicken all natural and raised with no antibiotics, it has no preservatives, no artificial colors, no fillers and no trans fats, perfect for our return to a healthy lifestyle.
This recipe calls for fresh herbs, oregano, thyme and dill, but as most of my herb garden had frozen in the recent cold snap, I substituted mint for the dill with no loss of flavor. In a pinch, dried herbs can be used. My son was a bit skeptical when I told him I planned to grill the chicken, evidenced by his eye roll and grimace that I was preparing another boring meal, but he soon changed his tune, telling me, “This might not be bad after all.” When I had finished the dish, he told me, “This looks as good as a meal you would get in an upscale overpriced restaurant, Mom.” Here’s what you need to make the dish:
These can be frozen to have on hand for dinner in a hurry, or served in pitas for a quick, on the go lunch. I wanted the entire family, including my celiac daughter, to be able to enjoy the recipe so I skipped the pitas.
- 3 tablespoons finely chopped fresh oregano
- 1 tablespoon chopped thyme
- 1/4 teaspoon crushed red pepper
- 3 tablespoons minced garlic
- 3 skinless, boneless chicken breast halves, cubed
- 1/2 teaspoon kosher salt
- 1/2 cup plain reduced-fat Greek yogurt
- 1/4 cup diced onion
- 1/4 cup chopped English cucumber
- 1 tablespoon chopped fresh dill OR mint
- 1 tablespoon lemon juice
- 1 cup chopped lettuce
- 2 roma tomatoes, sliced
- 1/4 teaspoon black pepper
- 3 ounces feta cheese, crumbled
- Mix oregano, thyme, red pepper, salt and garlic into a bowl. Place cubed chicken breast and oregano mixture into a food processor and process until mixed. Shape into six patties. Meanwhile, mix together yogurt, onion, cucumber, dill OR mint, lemon juice and dash salt. Place in fridge until ready to serve. Grill chicken patties, turning once, for ten to fifteen minutes or until no longer pink on the inside. Arrange lettuce on plate. Place chicken patties on top of lettuce. Add tomato slices topped with pepper and feta cheese to plate. Serve with sauce. The patties can be placed into pitas if you would like to make a quick, on the go lunch.

This chicken sounds great. We buy organic foods most of the time, but we haven’t done that with meat yet because it’s so absurdly expensive. I worry about the antibiotics the animals are given and what their diet was like. I don’t belong to Sam’s Club, but maybe now I’ll look into it!
