There’s nothing like having a family of picky eaters, especially when some of them have food allergies. Between Brittany and Jenna’s food allergies, I’ve had to make recipes that are gluten free, soy free and dairy free when they come to visit. But they still have to taste good or the rest of the family won’t eat them. Talk about a challenge! This almond butter white chocolate chip cookie recipe rose to the occasion, pleasing everyone. I used white chocolate chips, which can contain dairy, so if you need a dairy free option, you’ll need to purchase Vegan White Chocolate Flavored Chips.
Almond Butter White Chocolate Chip Cookie Recipe:
This recipe only has five ingredients, so it’s a cinch to mix up. If you prefer, you can substitute milk chocolate or semisweet chocolate chips for the white chocolate chips. Or you can leave out the chips, but I think they add flavor. The recipe calls for one egg, but if the mixture is too thick, add one more. You’ll need the following:
Ingredients:
Almond Butter
Brown Sugar
Egg
Vanilla
White Chocolate Chips
Step by Step Directions:
Step 1: Mix almond butter, brown sugar and the egg together until smooth.
Step 2: Stir in vanilla.
Step 3: Add white chocolate chips and mix until blended.
Step 4: Roll dough into one inch balls and place on a baking tray covered with wax paper. (This makes for super easy clean up.)
Step 5: Using a fork, make an x on top of the cookie.
Step 6: Bake cookies for 8-10 minutes at 350 degrees or until lightly brown.
