Almond Amaretto Pound Cake Recipe

One of my favorite desserts as a child was my mom’s Million Dollar Pound Cake. It had a dense texture, an awesome burst of flavor from the three different extracts used, and a crumbly crust I loved, making it one of the first items to be devoured at our annual 4th of July festivities, especially when topped with a scoop of homemade ice cream. This year, we plan to host a 4th of July party for friends and I needed a dessert that would hold up well in the heat and still taste great. I remembered the delicious Million Dollar Pound Cake and thought, I’ll expound on= that recipe and make an Almond Amaretto Cheesecake. Wow! I’ve been sharing this with my extended family and it’s been a hit with everyone. I don’t think this one will make it until the 4th, which gives me the perfect excuse to make another one.
Almond Amaretto Cake

Pound cakes can be a little expensive to make, so my cost cutting secret is to shop at Aldi for my ingredients. I purchased everything I used in my cake, except the Amaretto, there.  Here’s what you need to make it:

The recipe isn’t complicated to make, but you do need to follow the steps EXACTLY AS INSTRUCTED to get the correct texture. Begin by creaming the butter and the cream cheese until fluffy. It should look like this:

Add the sugar gradually, beating after each addition. I usually add about 1/2 cup, beat until well mixed, and then continue adding in 1/2 cup measurements. The mixture should look like this after sugar is added.

Add the Amaretto and Vanilla, beat until blended. Gradually add flour,  1/2 cup at a time, beating after each addition.

Batter should look like this when completed:

Spray a bundt pan with cooking spray and add almonds to bottom of bundt pan. Pour batter on top of almonds.

Place the mixture in a preheated 350 degree oven for an hour and five minutes, or until a knife inserted into the cake comes out clean.  Allow cake to cool before removing from pan.  While cake is cooling, make the Amaretto glaze. Poke holes in top of the cake with a fork and drizzle the topping over the cake.

Almond Amaretto Pound Cake Recipe
Ingredients
  • 1 1/4 cups butter, softened
  • 1 (3-oz.) package cream cheese, softened
  • 2 1/2 cups sugar
  • 1/4 cup amaretto OR Substitute 2 Teaspoons Almond Extract
  • 1 tablespoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 6 large eggs
  • 1/2 cup almonds
  • Glaze:
  • 3/4 cup sugar
  • 6 tablespoons butter
  • 1/4 cup amaretto Or Substitute 2 Teaspoons Almond Extract
  • 2 tablespoons water
Instructions
  1. Preheat oven to 325°. Beat butter and cream cheese at medium speed until creamy. Gradually add sugar, beating until light and fluffy. Add amaretto and vanilla, beat until blended. Gradually add flour to butter mixture, beating after each addition.
  2. Add eggs, 1 at a time, beating until blended. Sprinkle almonds over bottom of a greased Bundt pan; pour batter into pan.
  3. Bake for 1 hour and 5 minutes or until a knife inserted in center comes out clean. While cake is cooling, make glaze. Mix butter, sugar, water and Amaretto over medium heat until mixture comes to a boil. Turn down to low heat, allow to simmer five minutes. Gradually spoon hot Amaretto Glaze over cake. Cool completely.
