The big argument around our house is whether muffins are a breakfast food, a snack food, or dinner food. A portion of the family argued muffins could be eaten anytime, while a small fragment (my daughter) announced muffins were only for breakfast. As usual, we turned to Google for the answer. While there were claims that muffins became popular as a breakfast food in the 19th century, I’m sticking with the “muffins for any meal” theory. However, after tasting a bite of this apple pear breakfast muffins recipe, everyone in the family told me, “These taste like something I’d eat for breakfast.” Make a batch of these the night before, pop them in the oven in the morning and the entire family can enjoy these moist muffins for breakfast.
Apple Pear Breakfast Muffins
The secret to getting the breakfast taste in these muffins is maple syrup. Mixed with cinnamon and French bread, these muffins are like a fruity muffin shaped version of French toast. As always, I suggest you adapt the recipe to suit your taste. If you like cinnamon, feel free to add a little more. If not, use a little less. Feel free to use only pears or only apples in the recipe if you prefer. During the summer when fresh peaches are in season, they’d be a welcome change from pears and apples.

- 1 (8 ounces) container cream cheese, softened
- 1 to 2 teaspoons ground cinnamon
- 1/2 cup brown sugar
- 3 eggs
- 1/2 cup maple syrup
- 1 cup milk
- 6 cups French bread, cut into 1/2 inch cubes
- 1/2 cup pear, chopped
- 1/2 cup green apple, chopped
- 2 tablespoons powdered sugar
- In a large bowl, mix together softened cream cheese, cinnamon, and brown sugar.
- Add eggs and maple syrup. Mix until blended.
- Gradually add milk, adding about 1/4 cup and blending after each addition, until all milk is used.
- In a separate bowl, stir together the apple, pear, and French bread.
- Add 1/2 cup of the egg mixture. Mix gently.
- Spray a 12 cup muffin tin with cooking spray. Spoon French bread mixture into the muffin cups.
- , Pour remaining cream cheese mixture evenly over muffins.
- *Muffins can be refrigerated overnight.*
- To cook muffins:
- Place muffins in a preheated 350-degree oven for 15 to 20 minutes or until a knife stuck into the middle of a muffin comes out clean. Allow muffins to cool slightly, about 5 minutes. Remove from the pan and sprinkle with powdered sugar.
You can make these muffins and let them sit in the fridge overnight or prepare them first thing in the morning, whichever makes mealtime easiest for you. This recipe also uses cream cheese. While I’m a big fan of cutting calories and using low-fat or fat-free items whenever possible, these apple pear breakfast muffins will not be as moist if you don’t use regular cream cheese. If you would like the recipe to be gluten-free, you can use gluten-free French bread.
