New Year’s Eve celebrations have always been pretty tame at our house. We usually watch a few movies, eat pizza and chill out. The kids would always try to stay up until midnight when they were younger (and still do, of course) to watch the ball drop in Times Square. Each year, for a treat, we try to serve some sort of sparkling cider or juice. I drag out the champagne flutes and fill them to the brim with juice. It’s a tradition the kids look forward to every year, even going so far as to repeatedly remind me, “Don’t forget to pick up the juice!” This New Year’s Eve, we’re changing it up a bit. When I saw the recipe for Homemade Apple Cider, I changed it a little bit and made an Appletini Mocktail. This recipe is super easy, has only three ingredients and can be made in less than five minutes. The kids can mix it up, if you don’t mind some spills and stickiness.

Step 1: Mix apple juice concentrate with lemon lime soda until blended.
Step 2: Pour mixture into champagne flutes.
Step 3: Add a maraschino cherry to the glass.
Tips: Before you attempt to make the appletini mocktail, chill the lemon lime soda. Allow the apple juice concentrate to thaw in the fridge for several hours and freeze the maraschino cherries for an hour and a half or until firm.
- 1 (12 ounce) container frozen apple juice concentrate, thawed
- 3 cups (24 ounces) lemon lime soda
- frozen maraschino cherries
- Mix the thawed apple juice concentrate and the lemon lime soda together. Add a frozen cherry to each glass and then fill with the apple mixture.
