Bacon, Egg, Tomato Breakfast Sandwich Recipe

Did you know September is National Breakfast Month? If you’re like me, the answer is “no.” I learned this fact when I was asked to prepare a recipe for a local television news program. My topic was ‘breakfast sandwich.’ After receiving the recipe, I read through the list of ingredients. It sounded okay, but not something I was excited to create. Especially for a segment filmed way too early on a Saturday morning. I decided to jazz it up a little. When I was finished, I had a tasty BET (bacon, egg, and tomato) Breakfast Sandwich.

How to Make A Delicious Breakfast Sandwich

The original version of this sandwich contained egg, tomato, cucumber, shredded cheese, salt, pepper, fresh herbs, and toast. Yes, that’s it. It sounds okay, but certainly not something I’d be excited about.

My version of this tasty bacon, egg, and tomato sandwich has the addition of a fluffy, whipped cream cheese spread for a base and, of course, bacon. Everything is better with bacon, right? I left out the cucumber, but feel free to add it back if you like.

Whoever created the recipe must have liked improvisation, because the ingredient list read ‘herbs of your choice’ and “shredded cheese.” I used some of my favorites from my garden; basil and chives, along with Italian Blend shredded cheese. Cheddar would also be a good choice.

An easy to make bacon, egg, and tomato sandwich. It can be adapted for gluten-free and vegetarian diets.
Ingredients
  • 2 slices toast
  • Cream Cheese spread (recipe below)
  • 1 hardboiled egg
  • 2 to 3 slices bacon
  • 1 tomato, sliced
  • To Make Cream Cheese Spread: (this recipe will make extra spread)
  • 4 ounces of cream cheese, softened
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon pepper (or to taste)
  • 2 ounces shredded cheddar OR Italian blend cheese
  • ¼ cup fresh herbs (chives, rosemary, and basil are good choices) -adjust the amount of herbs to your taste
  • Place the softened cream cheese in a medium bowl. Add the salt, pepper, shredded cheese, and herbs. Using a mixer, beat the cream cheese blend until smooth. Store the remainder in a airtight container in the fridge.
Instructions
  1. Prepare toast.
  2. Spread 1 tablespoon of cream cheese mixture across one slice of bread.
  3. Thinly slice the hardboiled egg.
  4. Layer the egg slices on top of the cream cheese mixture.
  5. Top with tomato slices.
  6. Add bacon.
  7. Place the 2nd slice of bread on top of the bacon slices.

 

Cooking Tips:

  • It can be served on toast of your choice. I use oat bread.
  • If you are in a hurry and need a hand-held breakfast sandwich, you can serve it wrapped in a tortilla or placed in a pita pocket.
  • Need a gluten-free version? Use gluten-free bread or pitas.
  • Make it vegetarian by using vegan bacon.
  • If you do not have fresh herbs, replace it with ½ teaspoon of dried herbs.

Gardening Tip: Crush the eggshells and mix them with coffee grounds. Place this mixture in the bottom of plant containers for a calcium and nitrogen boost. It’s cheap fertilizer!
