Bacon and Tomato Pie Recipe

Usually, when I think of pies I think of the sweet versions.  S’mores Pie, Frozen Strawberry Lemonade Pie,  Peanut Butter Pie, Butterscotch Pie. Really, I like almost any kind of pie. Can you tell? But, sometimes family and friends give you a recipe that’s different. One of those that sounds so good you have to try it. That’s the case with this Bacon Tomato Pie Recipe

It’s more like a quiche than a pie and includes savory ingredients, like bacon, tomatoes, and scallions.  I don’t serve it often because it’s incredibly fattening, but,  it’s perfect for the occasional treat when fresh tomatoes are in season. It’s the perfect dish to serve at brunch.

Bacon and Tomato Pie Recipe

I found this recipe many years ago in a regional Georgia magazine but it didn’t include bacon.  One of our neighbors had a surplus of tomatoes and popped up at my door every few days holding sacks of rich, plump tomatoes. After that summer, I kept the recipe at the back of my mind but didn’t make it often.

Then, the next summer, a friend asked me if I had a good recipe for tomato pie. I told her, “Of course!” I shared my recipe and decided to make a couple for us too. I had leftover bacon in the fridge. Everyone knows bacon and tomatoes go together so I crumbled it up and added it in. The recipe was a success and the rest is history. Now, we have this luscious pie once a month in the spring and summer when tomatoes are in season.

Cooking Tips:

  • This recipe works best with firm, ripe tomatoes. If tomatoes are too mushy, they will fall apart in the pie.
  • To make this recipe Gluten-Free, use a gluten-free pie crust.
  • Slice the tomatoes and lay them on a paper towel to drain for around five minutes. Gently pat them dry with another paper towel. This will help prevent the tomatoes from becoming mushy before and during baking.
  • If you can’t find or don’t have any scallions, substitute an equal amount of onion. Green onion is preferred but a sweet variety of onion (Vidalia or yellow) works well also.
  • Be sure to blind-bake your pie crust before adding the filling.
  • Pre-cook the bacon before adding it to the pie.
  • It’s best to use full-fat mayonnaise in this recipe.
  • Bake the pie until the center is set and a knife inserted in the middle comes out clean.

How to Blind-Bake a Pie Crust:

  • Preheat the oven to 350 degrees.
  • Prick the bottom and sides of the pie crust with a fork.
  • Bake the pie crust for 10 to 12 minutes or until the crust is light brown.
  • Allow to cool slightly before adding the filling.

How to Prevent Soggy Pie Crusts:

  • Lightly beat one egg in a small bowl. Use a pastry brush to cover the bottom and sides of the cooked and cooled pie crust before adding the filling.

How to Prepare Bacon in the Oven:

Did you know you can bake bacon in the oven? This is a great way to avoid the mess of frying and splattering, plus this method is super simple. Just place slices in a roasting pan. Don’t let them touch or overlap. Place in a preheated 350-degree oven. They need to cook approximately 20 minutes, depending on how crispy you like your bacon, and turning them once after about ten minutes. Super simple and makes for easy clean up too.

What You Need to Make the Pie:

  • firm, ripe tomatoes with no soft spots or bruising
  • scallions (see cooking tip above if you don’t have scallions)
  • fresh basil leaves
  • frozen pie crust (or make your own from scratch)
  • salt and pepper
  • mayonnaise (use full-fat in this recipe)
  • cheddar cheese (sharp adds extra flavor)
  • mozzarella cheese
  • cooked bacon slices

Ingredients

  • 1 (9-inch) pie crust, baked

  • 4 large tomatoes, sliced

  • 1/2 cup scallions

  • 8 to 10 fresh basil leaves, chopped

  • 1 teaspoon salt

  • 1 teaspoon freshly cracked black pepper

  • 1 cup shredded cheddar cheese

  • 1 cup shredded mozzarella cheese

  • 1 cup mayonnaise

  • 5 to 6 slices bacon, cooked and crumbled

Directions

  • Preheat the oven to 350 degrees. Prick the bottom and sides of a pie crust with a fork. Bake for 10 to 12 minutes or until the crust is light brown. Remove from heat.
  • Layer tomatoes, scallions, and basil on the bottom of the pie crust. Sprinkle with salt and pepper.
  • In a medium bowl, mix mozzarella cheese, cheddar cheese, mayonnaise, and bacon. Spread the cheese mixture evenly over tomato mixture.
  • Bake for 30 minutes or until a knife inserted in the center comes out clean.
