No Bake Granola Bites Recipe Gluten Free

“I want to eat snacks too!” my daughter declared, after walking in on the rest of the family while we were furtively enjoying a gluten filled snack.  It has been a challenge, but I am finally getting the hang of making flavorful snacks and meals.  When someone complains to me, “Gluten free food tastes like cardboard,” I serve them a snack without telling them it is gluten free. When I announce the “big gluten free” reveal, they are always surprised and tell me, “But this tastes good!” This recipe for gluten free granola bars is no bake and can be prepared in less than 10 minutes.  Be sure to keep it stored in the fridge to keep the bars firm.

Gluten Free Granola Bars

If you have read my blog for any amount of time, you know I never follow the basic directions on any recipe. I am always adding ingredients, substituting ingredients and putting a little more than the amount called for if I especially like an ingredient.  The good thing about most of my recipes is you can do the same. If you are not a fan of the add-ins in these bars, leave them out or change them to ingredients you like. Don’t want to use peanut butter? Substitute Almond butter or Nutella.  (I looked up Nutella and it is gluten free! Isn’t that awesome?)

Here’s what you need to make the bars:

No Bake Granola Bites Recipe Gluten Free

A delicious Gluten Free Granola Bar recipe the kids will love!
Ingredients
  • 2 cups (16 ounces) Bob’s Red Mill Gluten Free Honey Oat Granola
  • 1/2 cup (4 ounces) each: honey and peanut butter
  • 1 1/2 cups (12 ounces) mixture of golden raisins, dried cranberries and slivered almonds
Instructions
  1. Add granola and almond mixture to a medium sized bowl. Stir in peanut butter and honey. Place in a 9″ by 9″ casserole dish that has been lined with waxed paper. Store in the fridge at least 30 minutes to harden. Remove waxed paper from bowl and slice into squares.

  13. I have been making some similar to this lately with natural chocolate chips. I also have to eat gluten-free. I need to try adding the fruit pieces in mine.
