Don’t leave this house without eating something for breakfast!” “Did you know kids who eat a healthy breakfast are more likely to do well in school?” “Remember, breakfast is the fuel of champions.” I’ve tried all these sayings with my kids in an effort to persuade them to eat breakfast before rushing out the door. My kids aren’t big breakfast eaters and will try to sneak out without eating if I don’t find something to tempt them. It doesn’t help that I am not a morning person and can’t be bothered to cook fancy breakfasts. My motto is “If it’s morning it’s too early for me to cook.” Thankfully, I have found a compromise, Aunt Jemima Lil’ Griddles. The kids love pancakes and I love that every batch is made by scratch with real ingredients,like sugar, milk, and eggs, just not by me. All I have to do is heat and eat. That’s my kind of breakfast! Plus, the Lil’ Griddles are bite sized, meaning everyone can have their perfect portion.
For those rushed mornings when we want to be “fancier”, I created a recipe for banana split breakfast pancakes. These can be put together in minutes and are like a dessert, only healthier. These don’t need to be topped with syrup because they’re flavorful enough to stand on their own. If you want the ultimate banana split experience, garnish the “banana splits” with whipped topping and a cherry. While my kids like the banana splits, they are just as happy to devour the pancakes plain with a little syrup.
- 12 Aunt Jemima Lil’ Griddle Pancakes
- 1 banana, cut into thin slices
- 1 container (6 ounces) strawberry yogurt
- 4 tablespoons chocolate granola
- Directions:
- Microwave Aunt Jemima Lil’ Griddle Pancakes as directed on the package. Place a Lil’ griddle on a plate and cover with a teaspoon of yogurt. Place 4 banana slices on the yogurt. Top with another Lil’ Griddle and repeat the process. Cover this mixture with one more Lil’ Griddle and top with a tablespoon of Chocolate granola.
OK – that picture looks tantalizingly tasty. Looks even better than it sounds.
We always eat breakfast and I like to try different pancake recipes. I have already tried bananas in my pancakes, but this recipe would also be great to try with yogurt and granola.

This recipe is perfect! The banana really gives it a unique and delicious flavor. I like the yogurt and granola on it to complement the flavor too. We’ll make this again!
