Summer is in full swing at our house and that means we are always on the go! Between the heat and our schedule, I like to prepare simple dinners which don’t require hours of prep. Because we have an open door policy, some nights I do not know how many people to expect. Our kids feel free to bring their friends over for dinner whenever they want. I try to work budget recipes into our menu whenever possible. One of our favorite budget friendly meals is Barbeque Bacon Burgers and Cheesy Ranch Potatoes. Both recipes come together in a snap and I can get one of the kids (or Bryan) to cook the burgers on the grill, making it a win-win for me!
While shopping at Walmart, I saw they had placed several of their Kraft products on rollback. Naturally, I snapped up the items I needed for my recipes like KRAFT Barbecue Sauce, KRAFT Ranch Dressing, and Kraft Mayo up and placed them in my cart fast enough to make the kids’ heads spin. They weren’t really surprised as they are well aware of my desire to create low budget meals whenever I can. I am all about saving money without sacrificing taste!
What I love about the Cheesy Potato recipe is they only require only a few ingredients, but taste like I fussed. Naturally, I don’t disabuse anyone of this notion. Plus, everyone who has ever tried them has raved about them. I always come home with an empty plate when I make this.
Here’s what you need to make them:
4 cups (32 ounces) potatoes, cut into cubes
1 teaspoon each: salt and pepper (or to taste)
2 cups Velveeta Shredded Cheese
1 cup (8 Ounces) onion, chopped
½ cup ( 4 ounces) bacon, crumbled
1 (16 ounce) bottle Kraft Ranch dressing
Mix all ingredients together and place in a 350 degree oven for 30 minutes or until potatoes are tender. Seriously, how easy is that? I had to chase all the kids away from the potatoes until I could take pictures because they kept trying to sample them! I noticed Bryan was swiping bites when he thought I wasn’t looking too.
My Barbeque Bacon burgers come together quickly and only require a few ingredients also. To feed four people you will need:
1 lb (16 ounces) hamburger meat
1 cup Velveeta Shredded Cheese
1/2 cup Kraft Mayo
1 cup bread crumbs (I used a few slices from a loaf of French bread)
1 cup (8 ounces) crumbled bacon (One package of bacon will be enough for this recipe and the potatoes!)
1 cup (8 ounces) Kraft Barbeque Sauce
Mix all the ingredients together, shape into patties and place on the grill.
Don’t these burgers look delicious? Just slap your favorite toppings onto them and they taste just like gourmet burgers without the fancy price tag!
Along with these the burgers and potatoes, I served corn on the cob–it’s in season and can be found 4 ears for a dollar in our area- and baked beans. It’s one of those budget meals no one complains about, least of all the kids. They look pretty satisfied, don’t they? I’m able to make a family meal for four for less than $20. It’s cheaper than eating out and we get to spend great family time together. That’s important during those tight times of the month, like around the 1st or 15th!

This sounds delicious! Now that the Dallas weather is cooling off a little, we are doing more bbq foods. The Barbeque Bacon burgers sound awesome, especially with the Cheesy Potatoes.
