I live in the South, where bar-be-que is a big deal. There’s hundreds (maybe thousands) of bar-be-que joints, and each state thinks they have the “best.” If you attend a cookout during the summer, there’s a strong chance you’ll have a choice of bar-be-que along with the usual hamburgers and hot dogs. Everyone has their own “secret” family recipe, supposedly passed down through generations. Our family’s recipe is rich, sweet and tangy, and I’m going to share how to make it, thanks to Lunchbox, who sponsored this post. I can’t promise it will be the “absolute best” you’ve ever had, but it is pretty tasty! This makes some pretty amazing bar-be-que pork sandwiches with a twist. I like to call them my Southern Style Bar-be-que Cuban sandwiches. Plus, the slow cooker recipe means minimal prep time. Just set back and enjoy the compliments when you’re done!
I start with a pork roast, which I place in a slow cooker. My sauce includes ketchup, mustard, salt and pepper, onion, vinegar and the “secret” ingredient, soda. After mixing the ingredients together, I pour them over the roast and cook on high for four hours. When the roast is done, it will be so tender you can pull if apart with a fork.
Once that’s done, it’s time for the pièce de résistance; making it into the ultimate Bar-be-que Pork Cuban sandwich. Spread 1/2 cup bar-be-que pork roast onto sliced French bread. Top with dill pickles, cheese, tomatoes, lettuce and Hellmann’s Mayonnaise. - 1 (3 lb) pork roast
- 1 cup ketchup
- 1/2 cup brown sugar
- 1 cup cola (use regular cola, not diet or flavored)
- 2 tablespoons each: mustard and vinegar
- salt and pepper to taste
- 1 medium onion, diced
- For sandwich
- French Bread, sliced
- Dill pickles
- Lettuce
- Tomato
- Hellmanns Mayonnaise
- Place pork roast in a slow cooker. Mix together cola, brown sugar, salt, pepper, ketchup, mustard and vinegar. Pour over pork roast. Cook on high for four hours. Slice. Serve pork roast on hamburger bun, with pickles and Hellmann’s mayonnaise.
