The Best Broccoli Cornbread Recipe

Cornbread is one of those Southern staples. I remember, as a child, how my Grandfather would crumble cornbread into buttermilk and have it for lunch. I’m not that committed to eating cornbread, but I still enjoy it on occasion. When my kids were younger and I was trying to find ways to incorporate vegetables into every dish I could find, I ran across this Broccoli Cornbread Recipe. I found it in an old church cookbook that had been given to me as a gift. Knowing that most of the recipes in this book were a hit with my family, I decided to give it a try. It became my daughter’s favorite recipe. She still hints for me to make this recipe. “You know what I wish we had for dinner tonight, Mom? Broccoli cornbread.” If that fails she tries harder core pleading. “Why don’t you make some broccoli cornbread, Mom?”

Broccoli Cornbread Recipe

I confess, I always used Jiffy Cornbread Mix in this recipe. It’s low cost and it works beautifully in the recipe. I still do unless I have to make a Gluten Free version for Brittany. If you need a Gluten Free option, substitute Gluten-free cornbread mix. I usually keep a bag of Bob’s Red Mill Gluten Free Cornbread Mix in our pantry especially for her. Just substitute 17 ounces of Gluten-free cornbread mix for the two boxes of Corn Muffin Mix.

The Best Broccoli Corn Bread Recipe
Recipe Type: bread
A delicious cornbread recipe that is perfect served on a Fall or Winter evening with soup.
Ingredients
  • 2 packages (8.5 ounces each) Corn Muffin mix or use 17 ounces gluten-free cornbread mix
  • 4 eggs
  • 2 Tablespoons butter, melted
  • 2 Tablespoons sugar
  • 1 cup (8 ounces) sour cream
  • 1 medium onion, chopped
  • 1/2 cup (4 ounces) shredded cheddar cheese
  • 1 (16 ounces) package frozen chopped broccoli, cooked and drained
Instructions
  1. Mix together the eggs, corn muffin mix, sugar, butter, and sour cream until well blended. Add the broccoli, shredded cheese, and chopped onion. Mix well. Pour the mixture into a greased 8″ by 8″ casserole dish. Bake the cornbread for 20 minutes at 350 degrees or until a knife inserted into the center comes out clean.

The best way to prepare this recipe is in an 8″ by 8″ baking dish. We use this one in our kitchen.
This broccoli cornbread is delicious served with soup on a chilly Fall or Winter evening. It’s also a welcome addition at potlucks or tailgating parties.
