Blueberry Cupcakes Recipe

Spring is in the air! To celebrate we whipped up a batch of these tasty blueberry cupcakes.  I had a hard time finding dried blueberries and they weren’t cheap. Next time I plan to substitute either fresh blueberries (in season) or blueberry flavored dried cranberries. I think they will be a little sweeter anyway.  I found my recipe in Cupcakes Made Simple from Love Food/Paragon Books.

Blueberry cupcakes, perfect for Spring and Summer.
Ingredients
  • 1?2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 3/4 cup dried blueberries
  • 2 tablespoons milk
Instructions
  1. Place 12 paper baking cups in a muffin tin, set aside. Mix the butter and sugar together in a large bowl until creamy. Gradually beat in eggs. Mix flour and baking powder together, sift into the butter mixture and stir until combined. Fold in blueberries and milk. Bake the cupcakes in a preheated 350 degree oven for 20 minutes or until golden brown. Let the cupcakes cool and frost with your favorite icing (I used cream cheese) or confectioners sugar.

If you use an icing on the cupcakes, they can be dusted with pastel colored sugar to make them festive and adorned for spring. What is your favorite seasonal treat for spring?

    • Tammy I hope your husband likes the cupcakes. If you use fresh blueberries add a little more sugar to add sweetness.

  5. These look like something my daughter would love! She is always wanting to bake fruit flavoured cupcakes. We usually just end up making muffins and frosting them, but I will have to give these a go!

    Those are some delicious-sounding cupcakes! I tried making blueberry muffins with frozen blueberries the other day – they turned out terrible! Quite the mess! (Have you ever had to eat a muffin directly out of the cup with a fork?)….

    I see that you are using dried blueberries in your recipe. This may be the change that I need to make in order to forgo the gooey mess in my next attempt to forgo the box-mix.
