Butterfinger Cupcakes with Butterfinger Cream Frosting Recipe

Butterfinger Cupcakes
One of the first things my extended family and friends ask me when they see me is, “Have you been cooking today? Did you make anything good?” I am not sure whether to take this as a compliment or not. On the one hand, it is good everyone is willing to sample my cooking because I can give it away.  If it were left setting around my house, I would have to eat it!  On the other hand, I wonder if they are only thinking, “Oh, here’s Pam. What did she bring me today?’  Whatever the case, everyone was happy to relieve me of these Butterfinger cupcakes I had made.  These are perfect for after Easter when you have some candy eggs leftover.  If you don’t want to use Butterfingers, you can substitute plain chocolate eggs. I’m also thinking these would be delicious made with chocolate marshmallow bunnies, but so far I have not had any of those bunnies to spare. Hey, you are only able to get those little critters once a year!
The Butterfinger cupcakes not only have a sneaky surprise inside (hint: it’s a butterfinger egg), but the frosting also has bits of Butterfinger eggs mixed in for a double whammy of delicious.  Here’s how to make them:

A delicious vanilla cupcake with a chocolate surprise inside.
Ingredients
  • For Cupcakes:
  • 3/4 cup (6 ounces)butter, softened
  • 3 eggs
  • 2 1/2 cups (20 ounces) all purpose flour
  • 1/2 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 1 3/4 cups (14 ounces) granulated sugar
  • 1 tablespoon vanilla
  • 1 1/4 cups (10 ounces) milk
  • 24 Butterfinger eggs, unwrapped
  • Frosting:
  • 1 cup unsalted butter (2 sticks or ½ pound), softened
  • 3 cups (24 ounces) confectioners sugar,
  • ¼ teaspoon table salt
  • 1 tablespoon vanilla extract
  • 4 tablespoons milk
  • 16 Butterfinger eggs, crushed (unwrapped)
  • optional: 24 butterfinger eggs, unwrapped for garnish
Instructions
  1. Mix butter, eggs and sugar in a large bowl until blended. In a separate bowl, mix flour, salt and baking powder. Alternate mixing the flour mixture and the milk with the butter mixture. Stirring after each addition until well blended. Add vanilla. Pour into 24 cupcake liners, adding one butterfinger egg into the middle of each liner, and bake in a 350 degree over for 20 or 25 minutes (until a knife stuck in the middle of the cupcake comes out clean.) Allow cupcakes to cool before frosting.
  2. To make frosting: Mix butter, salt, confectioners sugar and vanilla extract into bowl. Add milk and blend well. Stir in crushed Butterfingers. Spread on cooled cupcakes.
  3. Optional: Top each cupcake with a butterfinger egg.
