Finding the perfect grilled cheese can be difficult when you have Celiac. Some sandwiches are too mushy, some are too hard. We wanted to find one that was just right! When Canyon Bakehouse offered to send us an assortment of their yummy gluten free products we decided to try our hand , using their 7 Grain bread, at making our own grilled cheese recipe. We craved something different than the usual fare and decided to combine our love of Caprese, that delicious tomato, mozzarella, basil salad, into gourmet grilled cheese sandwiches. The result was a sandwich lover’s delight; the Caprese Salad Gourmet Grilled Cheese.
Caprese Salad Gourmet Grilled Cheese Ingredients:
1 (8 ounce) ball fresh Mozzarella, thinly sliced
8 basil leaves, washed and patted dry
3 plum tomatoes, washed, dried and thinly sliced
salt and pepper to taste
1/2 cup olive oil
1 loaf Canyon Bakehouse 7 Grain Bread
butter, as needed
Directions:
Thinly slice the tomatoes and spread them out on a paper towel or cloth. Pat them dry. Don’t skip this step because you don’t want mushy sandwiches! Sprinkle salt and pepper onto the tomatoes to taste. Drizzle the tomatoes with the olive oil. Thinly slice the mozzarella. Layer one to two slices of mozzarella onto a piece of the bread. On another slice of bread, add several slices of tomato and top with one to two large basil leaves.
Place a tablespoon of butter into a skillet and heat on high until the butter melts. Reduce heat to medium heat and add the slices of sandwich. DO NOT Assemble yet! Just add the individual slices. Allow sides to brown for 1 to 2 minutes and then combine sandwich. Allow to cook for another minute, flip and cook the other side. Serve immediately.
If you have Celiac, Canyon Bakehouse products are like having “real” bread again. We tried the Foccacia with dinner one evening and no one knew it was gluten free until we told them! Believe me when I say, “Huh, this tastes like REAL bread!” is a huge compliment for any Gluten free product.
