Caramelized Bacon Onion Dip and Cheese Bars

It’s only a few weeks away from the Big Game.  While Bryan and his friends enjoy the game, I’m an avid commercial watcher.  Because I don’t want to miss any of those commercials, I try to have my game day snacks ready to go before the game.  During one of my (many!) recent shopping trips to Walmart, I ran across the new Cheez-It Grooves, a cross between a traditional Cheez-It and a chip.  I grabbed a box and then a can of Bacon Pringles. Because who doesn’t love bacon?  With chips in hand, I thought about recipes I could prepare.  My son-in-law has a weird habit-he loves to chop veggies.  Seriously. He walks in my door asking, “Do you have any vegetables you want chopped?”  I decided to take advantage of  employ my son in law’s desire to chop onions with a tasty Caramelized Bacon Onion Dip recipe.  With the Cheez-It Grooves, I planned to make a decadent Cheese Bar recipe.

You can make the Carmelized Bacon Onion Dip in advance, but it is best served warm.  Here’s a handy hint: Place the dip in a crockpot set on low.  You’ll get the creamy, warm dip without having to stay in the kitchen.

Caramelized Bacon Onion Dip #GameDaySnacks
Ingredients
  • 3 medium onions, chopped
  • ½ cup butter
  • ¼ teaspoon ground cayenne pepper
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • 1 teaspoon dried chives
  • ½ cup EACH: sour cream, softened cream cheese, shredded cheddar cheese and mayonnaise
  • 6 slices bacon, cooked and broken into pieces
Instructions
  1. Melt butter in skillet. Add sliced onions and saute until tender. Add cayenne pepper, salt, pepper and dried chives. Turn heat to low and allow to cook for five more minutes. Stir occasionally. Remove onions from heat and add to large mixing bowl. Add sour cream, cream cheese, cheddar cheese, mayo and bacon. Mix until blended. Serve warm. (You can use a crockpot set on low to keep it warm if you wish.)

Living in the South, I think it is a requirement to have your own Cheese Straws recipe.  These zesty little squares make an appearance at almost every event, potluck, or party. They’re a pain to make. To get the perfect square you have to chill the dough and spritz it out of a cookie press.  I’ve simplified the recipe by using a base of new Cheez-It Grooves.  They taste just as good, only they’re a lot easier to make and not as frou-frou, making them Cheese Squares.  Here’s what you need to make them:

Ingredients:
3 cups Cheez-It Grooves
1 teaspoon kosher salt
1/2 teaspoon cayenne pepper
4 tablespoons butter
1 cup cheddar cheese, shredded
1 tablespoon flour

Directions:
In a large bowl, mix the butter, cheese, flour, salt and pepper until  mixture is crumbly.  In a 9″ by 9″ pan, spread a layer of Cheez it Groves across the bottom. Top with crumbled cheese mixture and bake 8 to 10 minutes.  Serve warm or cold.
