This is a total win-win situation. I’m able to purchase products I actually use in my kitchen and earn Labels for Education for my children’s school. Campbell’s has a collection of recipes using the Labels for Education products and feeling inspired, I found this Cheesy Chicken and Potato Casserole using Campbell’s Soup. Naturally, even with a five star recipe rating, I had to add some personal touches to make it my own. Here’s my revised recipe. The original recipe called for sour cream, but sometime while I was away from home the sour cream I knew was in the fridge disappeared. I didn’t want to run to the store, so I used jalapeno dip.
I also wanted to add veggies so I threw in what I had on hand–tomatoes, green pepper, mushrooms and onions. Be sure to saute them because they will not get done in the casserole. My family are not fans of crisp veggies in casseroles! If you don’t want to bother with chopping all the veggies, just use a can of Pace Salsa instead.
- Vegetable cooking spray
- 1 can (10 3/4 ounces) Campbell’s® Condensed Cream of Chicken Soup with herbs
- 1 cup sour cream (or jalapeno dip)
- 2 cups shredded cheese (I used the taco cheese blend)
- 1/2 cup milk
- 1 tablespoon minced garlic
- 1 package (28 ounces) frozen diced potatoes (hash browns), thawed
- Salt & Pepper to taste
- 3 cups shredded cooked chicken
- 4 slices bacon, cooked and crumbled
- 1 cup each sliced mushrooms, chopped bell pepper, chopped green onion, chopped tomato
- 2 tablespoons butter
- Heat the oven to 375°F. Spray a 13x9x2-inch baking dish with the cooking spray. Stir the soup, sour cream or dip, 1 cup cheese, milk, salt & pepper in a medium bowl.
- Melt butter in a skillet. Add bell pepper, onion, mushrooms and garlic. Saute for five minutes, stirring often.
- Spread the potatoes in the baking dish and mix in garlic mixture and tomatoes. Top with the chicken. Spread the soup mixture over the chicken. Cover the baking dish.
- Bake for 40 minutes or until the potatoes are tender and the mixture is hot and bubbling. Uncover the baking dish. Sprinkle with the remaining cheese. Bake, uncovered, for 5 minutes or until the cheese is melted. Sprinkle with the bacon before serving.
When making this casserole I always make an entire package of chicken and bacon plus I chop up extra veggies. It’s no problem to whip up an extra casserole to place in the freezer, making an easy dinner for a night I know I will be rushed.

I think this would be a perfect meal for making on a weekday afternoon after working all day. It is full of delicious ingredients but convenient to make.

Quick dinners for us is usually a quesadilla or something I can cook in an appliance like the panini press etc or one pot. This looks like something we could do pretty quickly also.
