Chewy Apple Oatmeal Cookies: Mason Jar Gifts

This year has been a difficult year for my family. My daughter, diagnosed with a rare genetic disorder two years ago, woke up one day three months ago with half of her body no longer working. As we scrambled for answers and went for test after test, my father was diagnosed with Congestive Heart failure, emphysema, pulmonary embolisms and fluid in his lungs.  Whenever I started to feel depressed or sorry for myself, something would happen to cheer me up.  Sometimes it was a phone call, text or card from a friend, just to let me know they were thinking about us.  Sometimes it was an unexpected gift, like a bouquet of flowers from a group of my blogging buddies, with a note saying, “We are only a click away if you need us.”  I have always tried to teach my children to help others, but until this year, when I was on the receiving end, I had not realized how much the smallest action can mean to someone else.    This Christmas season I decided to “Give Extra” to people around me who could use a pick me up.  I love gifts in a jar because they can be baked whenever and don’t have to be eaten right away.  These Apple Cinnamon White Chocolate Chunk Cookies are the perfect way to brighten someone’s day.

Extra Gum Moments
To make the mason gift jars, mix together the flour, salt and baking powder.  Pack down in bottom of jar.  Add the layer of apples, then a layer of brown sugar.

Top with the oats, add the layer of sugar and top with the layer of white chocolate chips.

I made a gift tag (the free printable gift tag  is below, just right click to save to your computer) ,attached it to a pack of Extra gum and fastened it onto the jar with ribbon. Chewy Apple Oatmeal Cookies: Gifts in a Jar #GiveExtra
Ingredients
  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon Vanilla Extract
  • 1 1/2 cups all purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 cups old-fashioned oats
  • 1/2 cup chopped dried apples
  • 1 cup white chocolate chips or white chocolate chunks
Instructions
  1. In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine the flour, cinnamon, baking soda and salt; gradually add to creamed mixture and mix well. Stir in oats, apples and white chocolate chips.
  2. Drop by tablespoonfuls onto an ungreased cookie eet. Bake at 350° for 10-12 minutes.
