Chicken Capri recipe

When we started on our strict new diet the first week of January, the kids bemoaned the lack of “decent tasting meals” we would be having. I decided to prove them wrong and set out to find something a recipe that would not illicit complaints. (Believe it or not my son did complain, “We are having chicken again??”)  I urged them to try it and everyone, including the complaining son, said it was good. They even went as far as to say they would be willing to eat it again soon.  I liked how it can be prepared in a snap with common ingredients found in most kitchens.  The recipe was originally found in the South Beach Diet cookbook but I adapted it by adding a few ingredients and changing it so it can be prepared in a skillet.

A lower fat and gluten free version of a classic Italian dish.
Ingredients
  • 1/2 cup (4 ounces) low-fat ricotta cheese
  • 2 teaspoons Italian seasoning
  • 1/4 teaspoon EACH salt and pepper
  • 1/4 cup (2 ounces)Parmesan cheese
  • 4 boneless skinless chicken breast halves
  • 1 teaspoon freshly minced garlic
  • 2 tablespoons extra virgin olive oil
  • 1 can (28 ounces) crushed tomatoes with basil
  • 12 black olives, chopped
Instructions
  1. Mix Ricotta cheese, Italian seasoning, salt and pepper together; set aside. Place olive oil in a large skillet; add garlic and chicken. Brown 2 minutes on each side. Add crushed tomatoes to skillet and bring to boil. Reduce heat to medium and allow to simmer for fifteen minutes. Top each Chicken breast with 1/4 of the Ricotta mixture, allow to cook for five minutes longer. Remove chicken from skillet and sprinkle with Parmesan cheese and olives.

This meal is so tasty the kids would not complain about it if we were not dieting.  What are your favorite diet friendly entrees?
