Chicken In Vermouth Cream Sauce Recipe

I recently received two bottles of vermouth from TW Hollister Co. Having read Vermouth can be substituted in any recipe calling for white wine, I was eager to try vermouth in one of my favorite recipes, White Wine Garlic Chicken. I reworked the recipe, adding a few ingredients to make a creamy vermouth sauce. Then I renamed it Chicken in Vermouth Cream Sauce.

Chicken in Vermouth Cream Sauce

This recipe has delicious herbal notes and is gluten-free. If the mixture is a little too tart for your taste, add 1 teaspoon of sugar.

Chicken in Vermouth Cream Sauce
A delicious twist to a traditional dish made with wine. Gluten-free.
Ingredients
  • 4 boneless, skinless chicken breast halves, sliced into strips
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 tablespoons butter
  • 1 package (8 ounces) sliced mushrooms,
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1/2 cup dry vermouth
Instructions
  1. In a large saucepan, skillet or Dutch oven, melt butter over medium heat.
  2. Add the chicken breasts to the butter. Cook for 5 to 6 minutes on one side, turn, and cook for 5 to 6 minutes on other side. Remove the chicken from the pan, leaving the liquid.
  3. Add the mushrooms and onions to the pan. Cook, stirring often, until vegetables are tender, approximately 3 minutes.
  4. Add the garlic. Cook for 45 seconds. Stirring often.
  5. Add the vermouth. Bring the mixture to a boil, and reduce heat to simmer. Cook until the sauce is slightly reduced. This should take 1 to 2 minutes.

T.W. Hollister is a new wine company with deep roots in the Santa Barbara area. The family patriarch, Colonel W.W. Hollister, moved to Rancho San Justo in 1854 along with his family and 10,000 sheep. As a fellow sheep farmer, I admire his dedication to herding these sheep cross country. Today, several key botanicals used in the production of their vermouth are still grown on the family homestead.

The Hollisters produce two types of Vermouth; Italian-style and French-style, although they label the bottles as “dry” and “red.”
The dry vermouth begins with a quality white wine infused with 16 botanicals including orange peel, rosewood, hyssop, wormwood, and chamomile. The red vermouth also begins with a quality white wine infused with a blend of 19 botanicals including hummingbird sage, grapefruit peel, blood orange, vanilla bean, ginger root, and wormwood.
Both of the vermouths are handcrafted in small batches of 1000 bottles to preserve the quality.

How can you use Vermouth?

*Both Red and Dry Vermouth can be used in cooking, especially dishes with seafood, fish, chicken, or pork.
*Red Vermouth gives a sweeter flavor and Dry Vermouth adds an herbal flavor to dishes, according to the Auguste Escoffier School of Culinary Arts. I’ve also seen vermouth used in jams and in poached fruit.
*Of course, Vermouth is often used in drinks including the famous Martinis, Manhattans, and Negronis. It can also be consumed on its own.

Cooking Tips:

*Vermouth can add a slightly stronger flavor than regular wine. You can add a little less vermouth in the recipe if you prefer.
*Store the vermouth in the fridge for up to four or five months after it has been opened.
*Because Vermouth is a fortified wine made from grapes, it is said to be gluten-free.
