Chocolate Caramel Thumbprint Cookies Recipe

When I get stressed, I bake. Needless to say, I’ve been baking a lot the past two weeks. Some of my friends and I have decided the best thing to do in these trying times is to create Tasty Tuesday.  This is a new weekly feature that will include easy recipes using common ingredients.  Some are joining today and more will be joining in next week. Chocolate Caramel Thumbprint Cookie Recipe

I found a basic recipe for chocolate thumbprint cookies, omitted some of the ingredients and made a caramel filling for the center.  I’ve recently begun using my air fryer for almost everything so I’m including instructions on how to make Airfryer Chocolate Caramel Thumbprint cookies too. No matter how you make them, these cookies are soft, rich, and have a delicious filling.  If you don’t want to make the filling from scratch, save time by adding a teaspoonful of caramel ice cream topping to each cookie.

These are a fun cookie to make when you are stuck inside with the kids. They can measure out ingredients, stir, and make thumbprints.

Chocolate Caramel Thumbprint Cookies Recipe

This chocolate cookie comes together in a snap and can be made gluten-free with a simple adaptation.
Ingredients
  • For the Cookies:
  • 1 package (17.5 ounces) sugar cookie dough mix
  • 1/4 cup cocoa powder
  • 1/3 cup self-rising flour
  • 1/2 cup (I stick) butter, melted
  • 1 egg
  • For the Caramel:
  • 20 caramel candies, unwrapped
  • 1/4 to 1/2 cup half and half or heavy cream
  • 1 tablespoon cornstarch
  • (Or substitute Caramel Ice Cream Topping for the homemade caramel)
Instructions
  1. In a large bowl, mix the cookie dough, cocoa, and flour until blended.
  2. Stir in the butter and egg. The mixture will be thick.
  3. Roll the mixture into one inch balls.
  4. Preheat the oven to 350°F.
  5. Spray a cookie sheet with cooking spray and place cookies on the sheet. Use your thumb to make an indentation in the center.
  6. Bale for 8 to 10 minutes. Remove from oven and allow to cool.
  7. Meanwhile, make the caramel.
  8. Place unwrapped caramels in a medium microwave-safe bowl.
  9. Add cornstarch to the half and half or cream. Stir until blended.
  10. Pour the cornstarch mixture over the caramels.
  11. Place the caramel mixture into the microwave and cook on high for one minute. Stir and cook for an additional one to two minutes or until caramels are melted and mixture is thick, stirring after each additional minute.
  12. Add one teaspoon of caramel filling to each cooled cookie.

How to Make the Cookies in an Air fryer:

Preheat the air fryer to 350°F.  Place a piece of parchment paper on the air fryer and spritz it lightly with oil. Add 9 cookies to the air fryer and cook for 8 minutes, shaking the basket halfway through cooking time.  Repeat with additional cookies, cooking in batches of 9 at a time.

Make it Gluten-Free:

Substitute one bag of gluten-free sugar cookie dough mix for the regular sugar cookie dough mix.
