Chocolate Chip Smores Cookie Cups Recipe

It’s almost Fall (or soon will be. The temperatures are still hovering around 90 degrees at our house.)  That means it’s time for one of my favorite Fall recipes-S’mores. What could be more fun than standing around a fire, too hot in the front and freezing in the back, while roasting marshmallows on a long pointy stick that will probably eventually burn someone? Seriously. You wouldn’t believe how many marshmallow related accidents I’ve seen.  Ok, so I’m not a fan of making S’mores the traditional way, but I am a fan of eating them.  Since I’ve been craving S’mores but wasn’t ready for a bonfire, I decided to create a new way to make them. I came up with these Chocolate Chip Smores Cookie Cups.  They’re so simple to make since they use prepackaged ingredients. And who can’t use an easy recipe every now and then?

Chocolate Chip Smores Cookie Cups Recipe

Sometimes I really want dessert but I don’t feel like preparing an elaborate “from scratch” concoction.  Maybe I’m busy, or tired, or honestly, just not in the mood to cook. That’s when I whip out recipes like this.  With only five ingredients and minimal preparation time, I can have a dessert on the table in no time. Plus, as a bonus, this dessert is tasty enough that if you add a scoop of ice cream and drizzle some chocolate syrup over it, you can claim it is a S’mores Lava cake.

You’ll start off with a few basic ingredients; a package of chocolate chip cookie dough from the dairy section of your favorite grocery store, some cream cheese, graham crackers,  chocolate bars, and marshmallows. That’s it unless you get wild and crazy and top it with ice cream and syrup.

Mix together the cookie dough, cream cheese, and graham cracker crumbs until blended.

There’s only a few steps to making the cookies too.  Just mix your cream cheese, cookie dough, and graham cracker crumbs together until blended.  Spread a heaping tablespoon of this mixture into a cupcake pan and spread the mixture across the bottom and up the sides.

Top this with a piece of chocolate bar and a half of a marshmallow. Spread more cookie dough over the top and bake. Viola! Simple Chocolate Chip Smores Cookie Cups!

If you want to make this recipe Gluten-Free, just switch to Gluten-Free Chocolate Chip Cookie Dough and Gluten-Free graham crackers. We like this kind: Kinnikinnick S’Moreable Graham Crackers.

If you’re interested in baking often (or even if you’re not and just want to make life easier on yourself), I recommend a 12 Cup Silicone Muffin- Cupcake Baking Pan.  These help keep muffins, cookies, or whatever you’re baking from sticking to the pan. I have traditional pans but these are so easy to clean and so easy to remove the goodies from that I use these almost exclusively.

Chocolate Chip S’mores Cookie Cups Recipe
Ingredients
  • 1 package (16.5 ounces) of refrigerated chocolate chip cookie dough
  • 1 (8 ounce) package of cream cheese, softened
  • 1 cup crushed graham cracker crumbs
  • 1 (3 ounces) chocolate bar
  • 6 marshmallows, cup in half
Instructions
  1. Mix chocolate chip cookie dough, cream cheese, and graham cracker crumbs until blended.
  2. Spread 1 heaping tablespoon of dough into each cookie or muffin cup.
  3. Place 1 square of chocolate onto the top of the dough.
  4. Place a marshmallow half on top of the chocolate.
  5. Spread cookie dough over the top of each muffin pan.
  6. Bake cookies in a 350 oven for 10 to 15 minutes or until cookies are done.
  7. Serve with ice cream and chocolate sauce, if desired.
  8. Makes about 12 muffins.
