Chocolate Peanut Butter Krispy Cookies Recipe

Sometimes I am in the mood for something sweet. Sure, I could cook a fancy dessert, but sometimes I’m running short on time. Or, to be honest, just don’t feel like it. Now, I’m a huge peanut butter fan. Someone once asked me, when viewing our church cookbook, if all the desserts we ever had were peanut butter. It’s not, but only because Bryan doesn’t share my love of peanut butter. Thankfully, I have a lot of cousins who like to share easy dessert recipes that include peanut butter. When I’m in a hurry and need a dessert, this no-bake Chocolate Peanut Butter Krispy Cookies Recipe is always a hit.

Chocolate Peanut Butter Krispy Cookies Recipe

Since this recipe is made in the microwave, it’s got a hands-on prep time of fifteen minutes or less. Plus, it’s naturally gluten-free. I like it because it only has five ingredients, but you can easily change the recipe to make different variations. This recipe uses white chocolate bark (found in the baking aisle of most stores) so the candy will harden. If you use chocolate chips, be sure to place the cookies in the fridge or freezer for 15 minutes so they will harden. You’ll also need to allow the chocolate to cool a few minutes before adding the marshmallows or they will melt.  I usually wait about 3 to 4 minutes before adding the marshmallows.  This recipe is easy to double or triple. In fact, they’re so good you’ll probably want too!

Chocolate Peanut Butter Krispy Cookies Recipe
These 5 ingredient cookies are no-bake and take less than 30 minutes to make.
Ingredients
  • 6 ounces white chocolate bark (should be 6 squares)
  • 1/2 cup peanut butter
  • 1 cup salted dry roasted peanuts
  • 1 cup rice krispies
  • 1 cup miniature marshmallows
Instructions
  1. Place the white chocolate in a microwave-safe bowl. Microwave on high power for 45 seconds. Stir. Return the chocolate to the microwave for 30 more seconds. Stir until smooth.
  2. Stir in the peanut butter. Allow the chocolate to cool for 3 minutes.
  3. Stir in the peanut, rice krispies, and miniature marshmallows.
  4. Drop by rounded teaspoonfuls onto a sheet of wax paper.
  5. The cookies will harden faster if placed in the freezer for fifteen minutes.

Variation Tips

*Substitute milk chocolate, semi-sweet chocolate, or dark chocolate for the white chocolate called for in the recipe.
*Substitute the peanuts for other nuts; almonds, pecans, cashews, or macadamias work well.
*Substitute Corn Flakes or Rice Chex for the Rice Krispies.
*To the original recipe, add in a cup of Reeses Pieces or M&Ms.
*Omit the peanut butter and peanuts.  Instead, add dried fruit, like pineapples, cherries, or cranberries (or a mixture!) and salted cashews.

To Melt Chocolate in the Microwave:  Place the chocolate in a microwave-safe bowl and microwave on high for approximately 45 seconds. Stir the chocolate and return it to the microwave for 30 more seconds. Stir until smooth.
