Do you know how difficult it is to find an Icelandic recipe? I didn’t either until my son came home from school and informed me each person in his cultural geography class would be assigned a country in Europe for a project. “Try to get Germany,” I told him. Not only do we have a German last name, I knew I could get authentic recipes from my friend Melanie, who moved to the US from Germany a few years ago. Instead, he came home and said, “Someone else got Germany. I got Iceland.” I sent his sister to scour the internet for easy Icelandic recipes. She presented me ideas like baked fish and Skyr. She was immediately sent back to the computer to find a dessert recipe teenagers would eat. Did I mention it needed to be easy?
Finally she came back with Chocolate Pikes, an Icelandic Cookie recipe. I started to make them and found they didn’t have enough flavor so I made some changes and jazzed up the recipe a little. While it’s not the absolute traditional recipe, it was a hit with the teenagers. My son brought back and empty plate and told me, “A bunch of people complimented your cookies, Mom.” So, without further ado, here is my version of Chocolate Pikes. You’ll need these ingredients:
These cookies are super simple to make. Just mix the softened butter, sugar and flour until creamy. Then add Cocoa Powder and Vanilla. Once they’re mixed, add the chocolate or vanilla chips and stir until combined. Roll the cookies into balls and place on a cookie sheet. Since they are supposed to be soft, under bake them a little. You’ll want the centers to still be a little mushy. Remove from the oven and allow them to cool. They’ll get firmer as they cool.
- 1 cup butter, softened
- 3/4 cup brown sugar
- 2 cups flour
- 1 tablespoon unsweetened Cocoa Powder
- 1 teaspoon vanilla
- 3 Tablespoons cream
- Mix butter and sugar together. Add the flour, cocoa, vanilla and cream until well mixed. Roll into little balls and press them onto your baking sheet. Bake at 350 degrees F for ten minutes.
You can adjust the ingredients if you think the recipe needs more chocolate flavor by adding another 2 teaspoons of cocoa. I can’t wait to see which country we will have next!

I remember doing these geography projects. Iceland does have some good recipes though, if you can get your hands on them. Many of them are traditional and might seem a bit odd to Americans. When I was in college getting my associates, I took a agriculture class that was a bit crossed with geography. I can’t remember at the moment what my project was, but I know I had a lot of fun doing it and learning about how the other side of the world lived.

That’s funny…I’ve always made vanilla cookies with chocolate chips. It never dawned on me to make them the other way around LOL These look good!
