Peanut Butter Truffles in Chocolate Shells

Around our house we love peanut butter and chocolate. This recipe is so simple and easy, but it looks impressive and tastes delicious. Plus, you can probably convince yourself it’s healthy. It has protein, dairy, and if you use dark chocolate, healthy properties.

You’ll need:
For filling:
1 cup peanut butter
1 cup confectioner’s sugar
2 tablespoons butter

For chocolate shells:
1 1/2 cups hershey’s kisses, unwrapped
2 tablespoons butter
cupcake liners

To make filling:
Melt butter in microwave. Add the peanut butter and confectioner’s sugar. Mix on low speed until mixture is creamy.

To make chocolate shells:
Melt chocolate kisses and butter in microwave until melted. I usually microwave for one minute, stir, and then microwave for another minute.
Place cupcake liners in a muffin pan. Use spoon to spread chocolate mixture around bottoms and sides of cupcake liner. Freeze until chocolate is hardened.

When chocolate is hardened, fill each shell with peanut mousse mixture. Return to freezer until mixture is firm.

The finished product will look something like this (probably better if you don’t allow your children to help as I do!) These are delicious.

Frugal Tip: A few days after a holiday, Walgreens will mark their hershey’s kisses to 75% percent off. Store them in the freezer and use as needed.
