White Chocolate Coconut Puffed Corn recipe

I am always on the lookout for a tasty, easy snack I can keep around the house for my daughter with Celiac. Naturally I want it to be something the entire family will want to eat. I don’t want it to sit in the kitchen for a month while everyone stares at it and then walks away. Recently, I discovered Cosmos Creation Puffed Corn. It’s gluten free and comes in a variety of flavors like Coconut Crunch, Cinnamon Crunch, Caramel, Sea Salt Vinegar and Aged Cheddar Cracked Pepper. I’d been munching on the puffcorn straight from the bags when I ran across a recipe for white chocolate Puffed Corn (just white chocolate + Puffed Corn). I was sure this would make an amazing snack when unexpected guests dropped by, plus I knew I had ingredients I wanted to add in my kitchen. I am one of those cooks who rarely use a recipe as planned and add ingredients until “it looks right.” Maybe that is passed down from a generation of Southern cooks, but this is the way I have always prepared things in my kitchen. It works, so why bother to change?

White Chocolate Coconut Puffed Corn recipe

A great gluten free snack to serve to guests.
Ingredients
  • 2 (1.7 ounce each) bags of Cosmos Creations Coconut Crunch Puffed Corn
  • 6 ounces white chocolate ( I had pink candy melts so I used those)
  • 3/4 cup nuts of your choice (I had coconut covered cashews available so I used them)
  • 1/4 dried cranberries
Instructions
  1. Melt 6 ounces of white chocolate in microwave for one minute. Stir and return to microwave for 30 more seconds. Remove bowl from microwave and mix in Puffed Corn, nuts and cranberries. Spread onto waxed paper and place in fridge until candy melts are hardened. Break into pieces.

 

 

 

Although the Cosmos Creations are great for snacking or in my White Chocolate Recipe for a special treat, here’s some of the other ways I have used the Puffed Corn this summer. I used it as a snack for guests at my daughter’s wedding while they waited for the wedding party to finish the photographs.

I used bags of the Puffed Corn during a recent outdoor celebration as a snack on my coffee bar.
