Some people do productive things while they’re stressed; like exercise or clean out their closets. Me? I bake.  When the Covid-19 quarantine began so did my stress baking. It’s gotten so bad that I overheard my husband telling my son, “Your mom bakes when she gets stressed. Prepare to eat a lot of desserts.”  To get the desserts out of the house, I’ve begun dropping them off at the neighbors and sending desserts to my husband’s coworkers.  While I love to bake, I’m also a huge fan of using simple recipes like this Double Chocolate Fudge.

Double Chocolate Fudge Recipe

I’ve been making this recipe since my kids were young and gifting it as Christmas presents to neighbors and friends. It’s the perfect recipe to make when you’re stressed because you can place the Oreos in a bag and whack them several times to crush them. I like to use double stuff Oreos because I like lots of cream filling. If you’re not in the mood for whacking things, you can place the Oreos in a blender or food processor for 5 to 10 seconds.

Double Chocolate Fudge Recipe
Recipe Type: dessert
An easy no-bake dessert recipe that has only four ingredients. It can also be made gluten-free by substituting gluten-free cookies.
Ingredients
  • 1 can (14 ounces) sweetened condensed milk
  • 1 bag (12 ounces) milk chocolate chips
  • 1 teaspoon vanilla
  • 18 chocolate sandwich cookies (like Oreos) crushed
Instructions
  1. In a medium saucepan, add the sweetened condensed milk and milk chocolate chips. Cook over medium heat, stirring occasionally until mixture comes to a boil.
  2. Allow the mixture to boil for three minutes, stirring constantly.
  3. Remove the pan from the heat. Stir in the vanilla flavoring.
  4. Add the crushed sandwich cookies. Stir until blended.
  5. Line an 8 inch by 8-inch pan with foil or parchment paper.
  6. Pour the mixture evenly into the pan.
  7. Place the pan into the refrigerator and allow to cool for one to two hours or until firm.
  8. Cut into cubes.

Cooking Tips:

*Want to make this a gluten-free recipe? Just substitute the chocolate sandwich cookies for gluten-free sandwich cookies.
*For easy cleanup, line the pan with aluminum foil or parchment paper. Just lift the fudge out when it’s chilled.
*Mix up the recipe by using different types of chips. You can use dark chocolate, semi-sweet chocolate, or peanut butter.

*Make a vanilla version by substituting white chocolate chips and golden sandwich cookies for the chocolate chips and chocolate sandwich cookies.
*Be sure to use sweetened condensed milk and not evaporated milk.  There is a difference! Sweetened Condensed Milk has had the water removed and sugar added. Evaporated milk is shelf staple cow’s milk which has had about 60% of the water removed.  You can find sweetened condensed milk in the baking section of grocery stores-usually right beside the evaporated milk.
