Easy 3 Ingredient Lime Pie Recipe (Plus Gluten Free Option)

Spring is finally in the air (says the person who was in Chicago last week where it started snowing as I walked around. That is just wrong. There should be no snow in the spring!) It’s time to pull out the spring recipes; those easy no bake recipes that don’t warm up the kitchen and take minutes to prepare. This recipe has been in the family since I was a kid, but we usually used it to make lemon pie. Since Bryan’s favorite pie is Key Lime I decided to mix things up a little and make his favorite. I wanted individual sized servings so I picked up some premade graham cracker pie shells, but this could easily be made into a single pie.

These pies are seriously easy to make. I started with some whipped topping and concentrated limeade from the freezer section.  I thought the lime mixture was too tart so I added a small amount of sweetener.  (I used Splenda.)  These pies will also be a pale white color, so if you fancy the green look for pies, add a few drops of food coloring.

Mix the whipped topping and limeade together until well blended. If you want it to be less tart, stir in the sweetener and mix.  Add the food coloring (if desired.) Spoon the filling into individual pie crusts, one 9″ pie crust, or use a gluten free crust. You can easily make a gluten free pie crust by mixing one box crushed gluten free graham crackers, 3 tablespoons melted butter and a tablespoon of sugar. Pat the mixture into a pie pan.

Ingredients
  • 6 graham cracker mini pie shells OR one 9 inch graham cracker pie shell
  • 1 (12 ounce container) whipped topping
  • 1 (12 ounce container) limeade
  • Optional ingredients:
  • 1/2 sugar OR artificial sweetener
  • 2 drops green food coloring
  • If making gluten free pie crust use
  • 1 box (12 ounces) gluten free graham crackers
  • 2 to 3 tablespoons melted butter
  • 1 tablespoon sugar
Instructions
  1. Mix limeade and whipped topping together, stirring until well mixed. Add sweetener, if desired, Stir. Add food coloring if desired. Stir. Spoon mixture into pie shells or mini pie shells. Store in the fridge.
