The quarantine we’re experiencing with COVID has produced a few unexpected results among my friends who hate cooking; they’ve decided to learn to bake. Since some of them didn’t even own a cookie sheet, they asked me for an easy recipe that anyone can make. I was happy to oblige and shared this easy Chocolate Chip Banana Bread recipe with them. It doesn’t matter what level baker you are, this bread is worth the short time it takes to prepare!
Easy Chocolate Chip Banana Bread
I first found this recipe on the Mr. Breakfast site and then adapted it to my tastes by adding the chips, a smidge of vanilla, and pecans. Everyone who has tried it has asked for the recipe. I consider that a win!
Cooking & Preparation Tips:
- This recipe can easily be made gluten-free by substituting a gluten-free one-to-one-all-purpose baking mix for the flour. Note: This will cause a small change in texture.
- Use your favorite kinds of chips in this recipe. Any of the following will work: milk, semi-sweet, or dark chocolate chips, butterscotch chips, peanut butter chips, or vanilla chips. Or you can use a mixture of chips. Sometimes I use mix 1/2 cup vanilla chips and 1/2 cup milk chocolate chips.
- You can substitute walnuts for pecans.
- Use very ripe bananas for this recipe. The peels can be covered with brown spots and be very soft. The browner the banana, the sweeter the flavor will be.
- Want to save money? Purchase marked down bananas when they are on sale. Peel them, mash them, and measure them into 1 cup portions. Place the portions in airtight freezer storage bags and freeze up to 3 months. You’ll have bananas on hand whenever you want to make the bread.
- Chocolate chips can be purchased on sale and stored in the freezer for up to 1 year.
- This recipe can also be made into 3 (6″ by 3 1/2″) mini loaves. I often do this and make one loaf with chocolate chips, one loaf with white chocolate chips, and one loaf with both.
- You can soften butter by letting it sit at room temperature for 20 minutes. Don’t have time for that? Here’s an easy trick: Grab your cheese grater and grate the butter into the bowl. It will cause it to soften quickly.
- Sometimes when I’m really in a hurry, I soften the butter in the microwave for 10 seconds.
Easy Chocolate Chip Banana Bread

1 stick butter, softened
1 cup granulated sugar
2 eggs, beaten
3 bananas, peeled and mashed
1 teaspoon vanilla
1/2 teaspoon salt
1 teaspoon baking soda
1 1/4 cup all-purpose flour
1/3 cup pecans
1 cup chips of your choice
Directions
- Preheat the oven to 350 degrees.
In a large bowl, add the butter and the sugar. Blend, using a mixer, for 2-3 minutes or until mixture is thoroughly combined. - Add the eggs, bananas, and vanilla. Mix well.
- In a small bowl, stir together the flour, baking soda, and salt. Add the flour mixture slowly to the batter, mixing well after each addition. Fold in the pecans and chips.
- Spray a 9 1/2 inch by 5 inch loaf pan with nonstick cooking spray. Pour batter into the pan and bake for 40-50 minutes or until a knife inserted into the center comes out clean.
Notes
- This recipe can also be made in 3 mini loaf pans.
This bread freezes well too. Wrap it tightly in aluminum foil or place it in an airtight plastic freezer bag. It will keep for up to 2 months. To thaw, place in the refrigerator overnight or on the counter for 1 hour before serving.
This is delicious served with a light smear of cream cheese or butter. If you prefer, you can drizzle melted chocolate over the top of the loaf.
