Can you believe Halloween while be here in a few weeks? Our evening, for the past 12 years, is spent hanging out with friends and passing out massive amounts of candy. The night begins with dinner. Each year we’ve tried to become more creative with the food we serve. One of the kids’ favorites is this easy Cyclops Sandwich recipe. It’s has five ingredients (or less) depending on how creative you get and what your kids like. You can also make it gluten free by substituting the bread with a gluten free version.
Easy Cyclops Sandwich Recipe
Ingredients:
You’ll need regular or gluten free bread, fillings of your choice, mayonnaise and green (or purple) grapes.
My kids loved cheese sandwiches so I started with their of their favorite kinds of cheese slices; Pepper Jack, Swiss and Muenster. You can also use ham or your favorite lunch meat or flavored cream cheese. Use whatever kind of filling your family likes.
Instructions:
Step 1: Place the filling between two slices of bread.
Step 2: Using a circle shaped cookie cutter, cut the bread and filling into a circle shape. Tip: I use the Cut N Seal from Pampered Chef because it seals the edges, making my life easier. This is a friend who is a Pampered Chef consultant. I receive nothing from the link.
Step 3: Squeeze a small amount of mayonnaise on both sides of the sandwich and spread it with a knife.
Step 4: Broil each side of the sandwich for a very short time, think 30 seconds to a minute.
Step 4: Once the sandwich is removed from the oven, add 1/4 teaspoon of spreadable cream cheese to the center of the sandwich. (You don’t have to do this step, but it holds the “eyeball” in place.
Step 5: Top it with 1/2 of a seedless green grape. I added a dash of red pepper flakes for a bloodshot eyeball look, but that’s totally optional. I serve the sandwich with “extra eyeballs” (green grapes) on the side.

- Per sandwich:
- 2 slices of bread
- Filling of your choice:
- Sliced sandwich meat
- Sliced cheese
- Cream cheese spread, whatever you like
- 1 teaspoon mayonnaise
- 1/4 spoon spreadable cream cheese
- 1/2 grape, your choice of red or green
- *red pepper flakes, optional
- Place filling between two slice of bread. Cut with a circle cookie cutter. Seal edges.
- Spread small amount of mayo on both sides of sandwich.
- Place under broiler for 30 seconds to 1 minute per side.
- Remove from heat and add small amount of cream cheese spread to middle of sandwich.
- Top cream cheese spread with one half of a grape.
- Sprinkle red pepper flakes around cream cheese for “blood shot” look, optional.
