There’s nothing that says loving from the oven like a homemade cheesecake, especially if it is made into a cute heart shape to express your feelings.  Having a husband with a chocolate allergy, this Dulce De Leche cheesecake is a recipe the entire family can enjoy if I change the ingredients a little to make it gluten free.  For anyone needing the recipe to be gluten free: omit the crust and substitute almond flour for the all purpose flour.  It can also be lightened up by using artificial sweetener and low fat cream cheese.   As the queen of shortcuts, I have discovered that a jar of Dulce De Leche can be substituted if you are in a hurry and don’t have time to make the caramel topping. If you can’t find Dulce De Leche, a jar of caramel ice cream topping can be used.

Ingredients
  • To Make Crust:
  • 2 cups crushed vanilla wafers (about 60 wafers) or graham cracker crumbs
  • 3 tablespoons sugar
  • 1/3 cup butter, melted
  • To Make Filling
  • 3 packages (8 ounces each) cream cheese, softened
  • 1/2 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 3 eggs
  • To Make Caramel Sauce
  • 14 ounces caramels, unwrapped
  • 1 can (5 ounces) evaporated milk
  • 1 cup chopped walnuts or pecans (optional)
Instructions
  1. To prepare crust: In a small bowl mix the vanilla wafers, sugar and butter until combined. Spread along the bottom of the pan.
  2. To make filling: In a large mixing bowl combine the cream cheese and sugar. Add flour and eggs, beat until well mixed. Add the vanilla extract, stir. Spread the filling on top of the crust and bake for 30 minutes until the center is almost set. Allow to cool. To make caramel sauce: Combine caramels and milk in a small sauce pan over low heat, stirring frequently until melted. Drizzle caramel sauce over cheesecake and top with nuts, if desired.

  110. That does sound surprisingly easy! I love that cake pan (mold? I’m not too savvy with kitchen terms, lol). It’s adorable! The silicone makes it look like it would be easy to pop it out, something I struggle with. In fact, I usually just leave the cake in the cake pan, frost the top and call it a day!
