I love making cute treats for my family and friends during the holidays. I try to make different treats each year and am constantly on the hunt for cute ideas. But, I’ll let you in on a secret. I don’t want to spend hours in the kitchen making my goodies. In other words, I like the praise for making cute treats without expending a lot of effort. These Easter Bunny Cupcakes are cute enough for your family to think they are “baked with love” (as my kids say when they want me to make them a special treat) and, if you are brave, you can allow the kids to help make the bunnies!
How to Make Easter Bunny Cupcakes:
The most complicated part of these cupcakes is making the bunny rabbits. I used my basic gluten free cupcake recipe, which is a jazzed up version of a prepackaged gluten free cake mix. I also used my recipe for buttercream frosting, but if you are in a hurry, a container of whipped vanilla frosting will do. You’ll need green food coloring or paste gel to tint the cupcakes to the desired shade of green for grass.
Once the cupcakes are cooled and frosted, begin making the bunny scene on top of each cupcake. You’ll need either green tinted coconut or green “Easter grass” licorice for the grass. Sprinkle a small amount on each cupcake. I made the carrots from orange and green gumdrops. Pinch off a small piece of orange gumdrop and roll it between your fingers until it forms a carrot shape. Pinch off a small piece of green gumdrop to use as leaves. I attached the orange carrot to the green leaf with a drop of frosting. I made two carrots per cupcake. Tip: Keep a wet paper towel or cloth beside you when making the carrots. They can be sticky! It’s hard to shape the carrots when they stick to your fingers.
Now it’s time to make bunnies! Each bunny is made of 3 mini marshmallows, pink sugar, a pink candy dot and black gel or a black food marker. To make the bunnies: Place one mini marshmallow on the cupcake. Turn the second mini marshmallow so the round top faces outward. Make two dots with the gel or the food marker near the top of the marshmallow for eyes. Attach a small pink candy decor dot to the center of the marshmallow with a small bit of icing. Place this marshmallow on top of the first marshmallow and attach it with a small bit of icing. Cut the third mini marshmallow in half. Take one of the halves and cut it in half again. Position these pieces on either side of the bunny for legs. Split the other half down the middle, but don’t cut it into halves. Dip this section into the pink sugar. Attach this half of the marshmallow to the top of the bunny for ears.
Printable Recipe:
- 1 package gluten free cake mix or traditional cake mix, prepared as directed on package
- 1 (16 ounce) container whipped vanilla frosting
- green food coloring
- 4 EACH orange slice and lime slice gumdrop candies
- 24 small pink candy dots
- 72 mini marshmallows
- 1 cup coconut
- Pink colored sugar
- black food gel or a black food marker
- Prepare cake mix as directed on package. Pour into 24 cupcake liners and bake as directed on package. Allow cupcakes to cool.
- Mix five to ten drops of green food coloring into frosting. Stir until blended. Frost cupcakes.
- Add five to ten drops of green food coloring to cup of coconut. Stir until blended. Sprinkle coconut on cupcakes.
- Make “carrots.” Pinch off a small piece of orange gumdrop and roll it between your fingers until it forms a carrot shape. Pinch off a small piece of green gumdrop to use as leaves. Attach the orange carrot to the green leaf with a drop of frosting. Place two carrots per cupcake.
- Make “rabbits.” Place one mini marshmallow on the cupcake. Turn the second mini marshmallow so the round top faces outward.
